Roswell,
NM
is
a
favorite
stopping
point
for
travelers
searching
for
aliens,
bats,
migratory
birds,
and
caves.
This
writer
came
for
baseball
at
the
New
Mexico
Military
Institute.
And,
as
I
typically
do,
I
searched
out
the
best
local
barbecue
flavors.
La
Sierra
Mesquite
Smoked
Bbq
warmed
this
Texan's
heart.
Housed
in
a
converted
drive-in
diner,
La
Sierra's
hosts
are
kind
and
welcoming.
I
enjoyed
the
eclectic
bbq-themed
decor
and
down-home
atmosphere.
But
the
star
of
the
show
was
the
mesquite
smoked
meats.
The
brisket
had
a
nice
characteristic
mesquite
'bite'
of
flavor
in
the
crust
and
needed
no
sauce.
Very
tender
and
colorful.
The
large
(silver-dollar
diameter)
smoked
sausages
were
mild
but
carried
the
smoke
flavor
throughout
the
entire
profile
of
the
meat.
Perhaps
the
best
surprise
was
pork.
This
was
one
of
the
most
consistent
and
tender
pork
butts
I
have
ever
tasted.
As
for
sides,
the
potato
salad
was
excellent
(even
though
I
am
not
normally
a
fan
of
celery
in
the
dish).
Mac
n
cheese
was
thick,
warm,
and
comforting.
I
added
a
little
barbecue
sauce
to
the
ranch
beans
and
they
were
perfect.
Barbecue
Unchained
is
pleased
to
recommend
La
Sierra
Mesquite
Smoked
BBQ
to
anyone
visiting
southeastern
New
Mexico.
