off,
the
ambiance
is
perfect.
We
went
for
lunch
and
dinner
and
both
ambiances
were
perfect.
They
change
the
lighting
and
table
set
up
to
accommodate
the
time
of
day.
It’s
not
too
fancy
but
nice
enough
that
you
know
it’s
special.
Second,
the
food
is
so
good.
So
much
thought
and
creativity
goes
into
each
course.
Ramonet
(the
owner)
and
Eduardo
(the
chef)
execute
each
course
perfectly.
If
you
choose
to
do
the
wine
pairing
as
well
you
won’t
be
disappointed.
The
pairing
is
truly
precise
and
delectable.
You
can
tell
Ramonet
is
in
it
for
the
experience
of
his
guests,
not
for
the
money.
If
you
have
a
good
palate
for
food,
this
is
the
place
to
be.
Cannot
wait
to
go
back
the
next
time
we’re
in
Valencia.
Liver
and
rabbit
(and
other
meats)
are
pretty
pronounced
in
Valencia,
we
did
tell
Ramonet
we
would
prefer
to
avoid,
and
it
was
no
issue.
A
lot
of
the
dishes
have
a
fishy
taste,
but
València
is
a
city
by
the
sea.
We
loved
it,
but
something
to
be
aware
of
if
you
don’t
have
a
diverse
palate.
