have
bought
Hasegawa
cutting
board
(48”
x
17”)
at
this
store
for
around
$700.
I
know
the
board
is
demn
expensive.
I
expected
it’s
good
but
when
I
tried
it
for
a
couple
of
hours,
it’s
turned
out
to
be
not
usable
in
commercial
kitchen.
The
cutting
board
surface
is
like
sand
paper.
Whatever
I
put
and
cut
on
the
surface,
its
residue
stays
on
the
surface.
The
residue
can
not
be
removed
with
wet
cloth
no
matter
how
hard
I
try.
Next
day
I
called
pure
range
and
they
do
not
want
refund
it
since
it
is
used.
Probably
I
will
contact
local
health
authority
to
see
if
this
kind
of
cutting
board
can
be
used
at
a
comercial
place.
As
far
as
I
know
it
is
impossible
to
use
it
due
to
cross
contamination.
For
the
time
being,
I
use
this
cutting
board
as
follows.
1.
Use
it
for
a
couple
of
hours
with
wipings.
The
board
becomes
ugly
with
various
residues
on
the
surface.
2.
Then
move
this
board
to
sink
and
clean
with
warm
soapy
water.
3.
Dry
the
board
in
dry
rack
for
an
hour.
4.
Sanitize
it
and
use
it
again.
I
am
suspicious
that
this
board
is
not
intended
to
be
used
as
general
cutting
board.
This
must
be
used
only
as
a
presentation
board,
something
like
sashimi
cutting,
nigiri
cutting
or
completing
dishes.
Otherwise,
it
is
so
hard
to
maintain
in
a
commercial
kitchen
and
costs
a
lot
of
labour
hours
for
cleaning.
I
wish
the
sales
persons
at
this
store
was
honest
about
this
fact
and
let
me
know
about
it
before
I
bought
it.
It
never
happened.
Do
not
complain
anything
at
this
store!
If
you
do,
beware
that
one
of
the
sales
men
is
s
good
at
teasing
you
and
making
you
an
idiot.
That
hurts
more
than
the
money
you
wasted.
