The basics of a restaurant is cooking skills and being able to do more than follow instructions of a recipe. Lacking in this area on all fronts including the ability to take criticism properly by the staff. If you like to be cheated out of your money go here. Overrated 2 star Micheline tourist trap. For my table guest 2 out of 5 courses needed be send back. She suffers allergies and the place seems to like to gamble with somebodies health. It reflected bad on the experience the restaurant provides. For this level the services should be much better and they should be much better to accommodate dietary requirements. Also lack of honesty trying to explain away pickled gherkins as being shallot is no good. The wine from the burgundy was however more than worth its price. It earned them the one star in the review together with the meat in the main dish.

Do not trust the negative reviews. This is one of the most creative French chefs outside of Paris. The experience was absolutely sublime. We had the "Classic-Fiction" menu, in which the chef re-imagines classic French dishes, with different ingredients and always with a twist. The Parmentier has been named one of the most creative dishes of the year by the Michelin guide. The reimagined Bouillabaisse (with foie gras! a superb combination) and the Cassoulet (with pigeon!) are to die for. I'd highly recommend the hotel as well. Very spacious contemporary rooms with large terraces. Order breakfast on your terrace, it's an absolute treat. Definitely a place I plan to visit again!

We treat ourselves to a romantic getaway at Le Parc de Franck Putelat and the big menu at La Table de Franck Putelat every year. Both are always exquisite. This year we chose the Jacuzzi Suite and the lunch seating, and both were great choices. I walked up the hill to La Cité for an evening stroll, and it was magical without the summer crowds. Little munchies in the room covered dinner — we were still full from lunch — and a Jacuzzi under the stars capped off a perfect day. Breakfast the next morning served to prolong the pleasure. Book early for the best choice of rooms. This is a small intimate hotel. Service in the restaurant and hotel is attentive and professional.

Being someone who reads others reviews before visiting, I was a little concerned to see some negative reviews for this restaurant. But as we were in Carcassonne the week before our 2nd wedding anniversary, and having celebrated our 1st at David Toutain another 2* restaurant, we wanted to make this a tradition so decided to give it a chance. We were so pleased that we did because it really was a wonderful evening! Of course the decor and service was impeccable but this you come to expect when eating at this level of restaurant. Being able to enjoy the beautiful weather eating on the terrace with a beautiful garden around was also a big plus. But the thing we care most about is the food and this is where we were blown away! The balance was perfect, we tasted different flavours and combinations, and did not experience the disappointment that we have had at a number of other high end restaurants. Having chef Franck Putelat say hello to each diner is a really nice touch. We've been to many expensive and michelin starred restaurants and have not experienced this before. When you have just enjoyed a wonderful meal it is normal to want to thank the person who made it for you, and this finishes the evening on a real high and you absolutely feel that every euro spent was worth it! We would totally recommend this to anyone wanting to enjoy a fabulous taste sensation, in beautiful surroundings and with perfect service.

Every aspect of this dining experience was perfect: the welcome, food, service, ambiance and pacing were faultless.

We were there for dinner. One of the worst food I ever had. Cooked oyster with Beef Tartar. Foie-gras in over-salted squid sauce and so on. Seems to be a new Chef.

Absolutely outstanding experience. I cannot find anything negative to sau, all the combinations of flavours were perfect and I enjoyed it from the very start to the very end. The beautiful dishes were served and presented by the most friendly and professional team and meeting the chef and his brigade in the kitchen in the end was a special moment. Don't change anything, you guys rock ! Thanks again, we will be back.

This hotel was over all acceptable. We had two rooms one with jacuzzi and another one just normal room. The other room was kind a boring. Nothing really good about it. The toilet was weirdly really far from bed so that was uncomfortable. The other day when we wanted to go extend our stay in the hotel. The reception told us we could and there is no problem with extended it. But when we wanted to leave to go to the city. The reception told us that we have to pack our stuff and leave now. There was like one hour between these two actions. When we try to find out on what side was problem with communication they told us it was on ours. We were really upset about this situation. And this changed our feeling about this hotel.

Amazing restaurant and really nice hotel. We had diner over there, and it was really delicious. The menu is worth many compliments. French cuisine, no big twist, quite classical, but really well executed. Safe bet if you're in the area. Just a bit expensive — obviously.

I highly recommend the restaurant la table de Frank Putelat. The setting is beautiful, we were sitting outside in their gorgeous garden of wild flowers and splendid arrangements. You can tell I am going to run out soon of superlatives, that’s how great this place is. The cuisine is innovative, elegant, refined, and beautifully presented, with fairly generous portions for the main dish despite being haute cuisine. My 10 year old son does not like rabbit or mussels, and truly enjoyed a dish that combined both! The staff is also phenomenal, discreet, professional, and polite. Highly recommended, this meal truly made our visit in Carcassonne special.

We ate in the restaurant and left disappointed. The amuses bouches were very nice, celebrating every essence that they contained. But the main course and desert were lacking in size and imagination. Instead we were given two bread courses to fill our empty stomaches, one with oil and one with three types of butter. Too expensive and too many Michelin stars.

We celebrated our 25th wedding anniversary with a wonderful meal and experience. Over a well paced meal with excellent variety and quality we experienced the fresh local food of the region. The staff was attentive and knowledgeable. The seating was well designed amongst the tranquil garden.

We ate at the 2 Michelin starred restaurant which consisted of a four course meal that was delicious. Amazing wine selection.
