After
several
days
on
business
trip
in
Lisbon
we
decided
to
head
to
a
hotel
with
good
reviews
and
a
sea
view.
Upon
arrival
at
Villa
Valbom
we
were
greeted
by
Floor
who
made
us
feel
welcome
from
the
moment
we
arrived.
We
were
given
a
brief
tour
if
the
hotel
and
grounds
and
Flora
helped
us
to
book
our
taxi
for
our
early
departure.
We
popped
over
to
the
restaurant
to
check
out
the
service
times
and
menu
and
met
the
owner
Jasper
who
laughed
with
us
when
we
let
him
know
that
we
would
be
back
for
food
after
a
swim.
There
had
been
no
sun
for
three
days
and
it
was
raining,
but
I
do
love
a
swim.
The
hotel
is
set
halfway
up
a
valley
from
the
beach
and
in
May
when
we
were
guests
was
set
in
beautifully
landscaped
grounds
in
the
most
serene
setting
with
great
sea
views
down
the
valley
(not
horizon
to
horizon
for
those
who
believe
that
is
a
sea
view,
just
a
beautiful
sea
view).
The
larger
pool
was
clean
and
fresh
and
the
smaller
pool
was
well
maintained
but
more
for
chilling
out
in
which
would
have
been
the
case
as
there
had
been
no
sun
for
three
days
and
it
was
7.30pm
at
night
when
i
tested
it,
it's
a
shame
the
weather
wasn't
fine
as
I
feel
that
I
would
have
spent
a
lot
of
time
in
the
garden
and
pools.
We
stayed
in
the
king
suite
with
ocean
views,
the
hotel
and
rooms
are
especially
clean
with
great
beds
and
the
water
in
the
bathroom
had
great
pressure
and
temperature
with
a
fantastic
rain
shower.
The
food
at
Villa
Valbom
was
exceptional,
there
was
no
menu
in
the
restaurant,
however
Jasper
took
the
time
to
describe
in
detail
the
food
for
the
day,
explaining
that
as
a
small
restaurant
catering
for
hotel
guests
he
liked
to
keep
the
menu
fresh
and
dependent
on
local
produce.
The
options
for
starters
were
seared
tuna
with
avocado
and
greens
finished
with
truffle
oil,
tomatoes
and
a
local
cottage
cheese
with
fresh
basil
and
a
salad
(which
my
friends
and
I
didn't
eat).
I
can
honestly
say
that
I
have
never
had
better
fresh
seared
tuna
before
this
and
it
set
a
new
benchmark
for
taste
and
freshness
for
me,
it
was
simply
divine.
I
also
tried
the
tomato
salad
and
this
too
was
exceptional
with
the
produce
coming
from
the
garden
of
a
local
gardener.
No
tomatoes
produced
for
retail
could
ever
stand
up
to
the
rich
flavour
of
home
grown
fruit.
For
main
course
I
choose
fresh
cod,
diced
and
marinated
in
saffron,
lemon
and
olive
oil
served
on
a
bed
risotto
with
a
side
of
greens
consisting
of
tenderstem
broccoli,
green
and
orange
carrots
and
asparagus.
After
the
starter
it
is
not
surprising
to
say
that
the
main
course
was
sublime.
My
business
partner
chose
rib
eye
steak
with
sweet
potatoes
dressed
in
creme
fraiche
and
mango
chutney,
their
review
of
this
was
"it
was
ace".
For
dessert
we
shared
a
goat's
cheese
cheese
cake
dressed
in
a
guava
and
a
stout
and
chocolate
cake
with
seasoned
whipped
creme,
both
of
which
were
light
and
lovely
and
managed
to
fit
in
on
to
of
our
generously
portioned
beautiful
previous
courses
in
just
the
right
way.
All
in
all
I
think
the
food
wad
probably
the
highlight
of
our
stay,
which
was
not
planned.
I
cannot
recommend
the
restaurant
here
enough!
It
turns
out
that
Jasper
had
previously
been
a
chef
on
super
yachts
and
to
be
honest
it
shows.
All
in
all
I
could
not
fault
Villa
Valbom
on
any
point
and
look
forward
to
returning
again
with
more
time
to
relax
and
enjoy
myself
in
this
beautiful
little
nook
of
the
universe.
