    Unmissable. If you’re in Dijon and love wine, you must come here. We had a 5-wine blind tasting which turned into an incredible 10-wine tasting (it was the owner’s birthday and he was very generous). We tasted some interesting and beautiful wines. It was a night we won’t forget. The owner and staff gave a lot of helpful information to understand the wine too. You can tell they’re passionate about what they do. Edit: I had such a good time that I returned two days later. Tried some different wines. Very grateful for the kindness and generosity here. 👍👍👍

    Very nice place to visit for a wine tasting and good plates. The owner has a real passion for wine and a great collection of old wines which he likes to share. The concept of blind tasting gives a nice opportunity to try old wines

    Caveau de Saulx is an absolute must if you’re into wines….and especially old wines! I went there together with my father as the last dinner on a wine trip in Burgundy – and even though we had tasted many different wines during the trip, none (or very few) of them could be compared to the very interesting wines we got served here! We got the wines served by Olivier, who both challenged us with a fantastic blind tasting of 8 different wines (we got 6 out of 8 correct region/grape-wise, btw😉) and really gave us such a great experience with his history, wine collection and kindness! Besides the very interesting wines, the lovey food and atmosphere in the beautiful cellar made this experience amazing. Already looking forward to come back!

    My Wife and I had an amazing time here last week on a Sunday. Olivier has one of the best collections I have ever seen first hand and I have been a professional Sommelier for a long time. His approach to blind tasting is easily one of the best experiences that I have ever had and his generosity and passion is absolutely heartwarming. This has renewed my passion for wine in a way that I never thought possible. I highly Recommend this experience. Thank you.

    A vintage wine-lovers paradise!! A must-visit for anyone interested in how wine evolves. You can be a beginner or be an MW or MS. It was a museum (a dreamland if you will) full of old vintages. The team were so friendly, informative and made it a fun and memorable experience. Set in a secluded cave beneath Dijon, you’ll be taken on an incredible & unique tasting journey. We were then so fortunate to meet Olivier - the most humble and generous owner. His charming personality, warm heart and of course his collection of wine are just utterly impressive!! We’re talking rare beauties that have gracefully aged from as old as you can only imagine. And some stunning aged spirits too!! I found a new favourite! You’ll learn a great deal, you’ll be seduced by these perfectly-kept bottles, and most importantly you’ll have a lot of fun and listen to some nice music as you go! Thank you Olivier & team!!

    The Caveau de Saulx is a precious and unique place where the pleasure of wine meets the special passion of the owner. Going down the stairs you can breathe an atmosphere of times gone by, with tables and sofas, slightly dim lights and stone walls. The place is very welcoming and characteristic. The place is focused on the value of vintage wines, which can be purchased both by the bottle and by the glass, and in blind tasting mode, which I highly recommend. The gastronomic accompaniment is suitable for the proposed concept: platters of selected high quality cured meats and cheeses, as well as some hot dishes, pleasantly accompany the wine experience. Particular note of merit goes to the owner who welcomes guests into his cellar with extreme passion, shares his rare bottles with them and accompanies them on an intense and fascinating tasting journey. The prices, given the quality and rarity offered, are really low because, repeating the owner's words, "wine is sharing". As a restaurateur, lover of wine and good gastronomy, the welcome and spirit that you can breathe here is very rare today.

    Unique experiece. We visited Caveau de Saulx while our visit to Burgundy. This is a must visit place for any wine lover. The place is just amazing and cozy, the old stone arches give the perfect atmosphere for wine tasting. We had the complete blind tasting, and it was an absolute experience. Olivier (the owner) shared with us his love, passion and vast knowledge of French wine. We could taste different wines from old vintages, all of them in an incredible shape, despite the age (some of them, several decades). His collection of aged wines (available for a taste) from all places is huge and uncommon. There are no places like that in the world, so, if you are around, please pay a visit and meet Olivier, you will not be disappointed.

    I came here with my partner for our anniversary— this was our first night in Dijon and our first blind wine tasting, and it was a totally unforgettable experience and we had the best time. We planned to stay for an hour, but ended up staying for over 3 hours as we learned all about regional and French wines from our server in one of the coolest spaces I’ve ever been in (15th century cellar with cool decor is hard to beat). Very reasonable prices for food (we got a cheese board and escargot) and a selection of amazing wines. Lou was probably the best server I’ve ever had, and he was incredibly friendly, funny, and knowledgeable. I can’t imagine coming to Dijon and missing out on this experience.

    A fantastic place to visit. Maybe it is better to describe it as an experience? The blind tasting menu is great fun! The staff were so lovely and helpful to my partner and I who were inexperienced with Burgundian wines of age. The venue is very attractive and cosy. We can’t wait to come back!

    Amazing experience for our short stay in Djion. Portions were very generous and Lou, went into great detail explaining the wine and showing us some of the cellar wines. Such a fun night. Highly recommend.

    Absolutely amazing vintage wine collection and spirit collection. Extremely knowledgeable owner. Great charcuterie board. Come for exclusive wine tasting including various Grand Cru and Premier Cru Burgundy wines, blind tasting, and a light dinner. The crispy escargot is delicious! We did a flight of 8 blind tastings and the owner will come over to listen to your analysis carefully. It’s tricky once the wines are 40+ years but it’s an unforgettable experience.

    My husband and I visited Caveau de Saulx on our last night in Dijon and are so glad we did. Stepping down into the cellar was like being transported to another world. Our attendant Lou was a very knowledgeable and friendly host. This was not just any wine tasting, nor was it just a restaurant.. it was a completely unique and memorable experience. Highly recommend having the blind tasting with charcuterie - you will not be disappointed. Lou explained the food (house made pate, yum!) and wine so well; and made the blind tasting a really fun experience. He was also kind enough to show us the wine cellar. Thank you Lou for your passion, expertise and attentive nature; we loved sharing our evening with you and getting to know you and the wines! Do not miss this if you are in Dijon!

    Over many years of working in the wine industry, this is by far my most memorable experience. Lou brought out 8 incredible back-vintage wines, each somehow more impressive than the last. The 1976 pommard and 1975 Fontesteau were serious stand outs. If you're reading this review, let this be your sign to go - it's a seriously incredible experience. Thanks again to Lou, I'll be back on my next trip!

    Nice experience with this blind wine testing. The wines we tried were very good. The service team was nice and friendly. The only downside in my opinion were the quantities on the food platters (especially the cheese one) hence only 4 stars. Otherwise the food was good but we would just have liked a bit more. Overall a good experience recommended.

    This is the first time I write a Google review, but just had to do it because I had such a great experience in this place. I had the 8-wine tasting menu and it was one of the most memorable wine tasting experiences I’ve had. The owner is clearly passionate about what he does, and still the prices are very reasonable.

    Beautiful place, nice concept. Expensive because of the old wines. Prices are fair though. You can only choose blind tasting or a bottle. Maybe it would be nice if you could choose 1 glass of wine (out of a selection of the day..?) Would recommend if you like wine with a story!
