a
Sicilian
pie
and
a
traditional
one;
both
out
of
this
world!
As
a
former
pizza
man,
I
know
good
pizza
and
the
science
behind
it,
and
it
looks
like
the
owner
must
know
too.
The
Sicilian
pie
was
literally
perfect:
the
crust
was
crisp
and
airy
with
a
perfect
blend
of
delicious
tomato
sauce
and
mozzarella.
Some
pizzerias
claim
to
make
Sicilian
pie,
but
all
they
give
is
a
thick,
doughy
square
pizza.
The
proofing
process
for
making
a
true
Sicilian
pizza
is
something
not
every
pizzeria
owner
is
aware
of.
The
baker
that
prepared
this
crust
must
have
many
years
of
experience
because
there
is
not
one
place
that
I
have
ever
tried
in
Florida
that
had
such
a
perfect
crust!
The
The
traditional
was
just
as
good:
thin,
but
not
too
thin,
with
a
rich
mozzarella
cheese
that
blended
into
the
sauce,
baking
together
into
a
flavorful
crust,
hence
creating
the
perfect
pie.
You
can
tell
they
use
a
high
quality
mozzarella
because
only
top
quality
chees
will
blend
like
that.
My
kids
begged
me
to
order
Gino's
from
now
on.
