Their coffee is an explosion of inimitable flavors and aromas, with an ever new variety. Very good. The merit? Without a doubt, the meticulousness and care that Tommaso and the others put into the preparation of the coffee, starting from the dosage of the coffee per mg, to the use of pure water and constant cleaning of the machinery, all this makes their coffee a guarantee. Without forgetting the underlying choice, that is, the use of extremely high quality coffees, delicious and worth trying. I said the main flaw at the beginning, it is addictive and you will no longer be able to drink a "normal" coffee in a "normal" bar, but honestly I would say that it is worth it. Finally a coffee shop where you can drink excellent coffee!!! Believe me, this coffee shop is one of the very few places where they make espresso as it should be made: they have a great blend (I think there is a good amount of arabica as there is little "crema" and the flavor is more persistent in the mouth ); they have an electric coffee grinder that dispenses the right amount; they weigh the ground coffee on a scale and pour it into the clean filter holder; they level the coffee powder inside the filter with the appropriate leveler (but when do they ever do this in other bars?!) and press it in the right way with the metal tamper (not the light plastic one!); they activate the shower of the coffee machine for a few seconds to remove the remains of the previous brewing and only at that point insert the filter holder. In Italy it is difficult to find a high level of professionalism as in this activity. Compliments !

It's really difficult to find a coffee made to perfection in Florence, which excels for many things but not for the cup of espresso.
