It
might
be
easy
to
mistake
Highlander
Coffee
for
just
a
friendly
little
cafe
with
good
coffee.
While
it
is
all
that,
we've
found
that
it
is
much
more.
When
wondering
about
replacing
our
single-boiler
espresso
machine
with
either
a
heat
exchanger
machine
or
a
dual
boiler
machine,
I
made
an
appointment
through
Highlander's
website
for
a
demo.
Phil
led
us
to
the
demo
area,
but
instead
of
jumping
into
a
demo
of
the
machines
they
retail,
he
took
time
to
ask
us
questions
to
try
to
understand
our
espresso/coffee
journey
and
why
we
feel
we
may
need
a
change
of
setup.
After
identifying
some
of
the
challenges
we
were
facing
with
our
setup,
Phil
took
time
to
explain
some
of
the
reasons
why
we
faced
those
challenges
with
our
setup
before
sharing
about
and
demonstrating
the
heat
exchanger
and
dual
boiler
machines
they
had
available.
At
no
point
in
the
demo
was
there
any
attempt
to
steer
us
one
way
or
another,
or
even
to
suggest
we
should
purchase
from
Highlander.
There
was
absolutely
no
pressure
to
make
a
decision,
even
at
the
end
of
the
demo,
but
I
had
pretty
much
made
up
my
mind.
A
couple
of
days
later,
we
placed
the
order
for
a
Lelit
Bianca,
which
was
delivered
two
and
a
half
weeks
ago.
Azlan
delivered
it
and
set
it
up,
then
took
time
to
walk
us
through
the
first
few
cups
of
coffee
pulled
on
the
machine
We've
very
happy
with
the
Bianca
and
also
in
purchasing
it
from
Highlander
Coffee.
If
I
could
turn
back
the
clock,
we
would
probably
have
done
it
sooner.
