    Dinner was fantastic and probably the best Vietnamese / French fusion I’ve ever had! The splurge is worth it! Located on the second floor of the Hyatt in Saigon this restaurant absolutely delivered. From the starters to the desert. The service was amazing and our server Thuan treated us fantastically. The oysters were incredibly fresh and the bone marrow even better. The wine pairing that our server suggested was perfect for the meals we had. We enjoyed a great night with good friends and it’s worth every single dong. We will be back for sure. They told me the menu would be changing soon as well so I’m very excited for that.

    The food was good for the price we paid. However, the quality of service was horrendous. First time I have ever experienced such a bad service handle from a fine dining restaurant. I wanted to pay using QR code or wireless transfer (which is a super common thing in Vietnam and I've done that in multiple of high-end restaurants before) and I did not bring my card with me. When I asked if there is anyway for me to pay using wireless transfer they said no and I have to figure it out myself, either go back to my house (which is the outskirt of Saigon) to get my credit card or go to an ATM to cash out. But remember, I do not have my card with me and all of the Techcombank ATM around it does not allow cash out with QR code. I ran accross different ATMs in the middle of the rain trying to transfer my money in the account to cash. In the end, when i came back, a super nice dude sat next to our table agreed for me to transfer him money and he paid for us. The frustrating thing is that the manager and the waiter just stand there and did not offer any assistance. I even asked the main desk of Park Hyatt and he tried to help me wireless transfer the money but the restaurant did not allow it. F*cking hell! Probably the worst fine dining experience ever. Square One really dissapointed me and tainted my impression towards Vietnamese high-end restaurants.

    This restaurant is a fine dining restaurant that served Vietnamese and French cuisines. We picked Vietnamese tasting platter as our appetiser that tasted amazing as we tried different small dishes and sauces perfectly matched. For the main courses, we ordered clay pot salmon with steamed rice and crab noodle soup which are delicious too that we really recommend to come here for enjoying the food 👍🏻😍

    After enjoying several nights of local Vietnamese street food, I decided to treat myself to a fine dining experience that combines French and Vietnamese fusion cuisine. We ordered the Vietnamese platter, which allowed us to savor all the local highlights, including spring rolls, mango prawn salad, soft shell crab, and scallops. The setup was lovely, offering just enough to taste everything. The foie gras, a French delicacy, was prepared exceptionally well and paired perfectly with wine. The scallops cooked with rice cake were a unique delight, and the rice cake could be enjoyed together with them. However, the grilled chicken was somewhat bland and average, and the fried rice lacked flavor and saltiness. The local grilled oysters were decent but didn't have a particularly pronounced taste. We concluded our night with the highlight—a crepe cooked with grand marnier liquor, accompanied by truffle chocolate, which paired wonderfully. While I believe that enjoying local food in a local setting is the best way to experience it, the ambiance of this place was undoubtedly top-notch!

    A nice restaurant with good Vietnamese, French food and seafood choices. The Vietnamese section was impressive to me since we were seated into this section. I noticed there were empty seats at the French food counter section while we were told there was no seats available when we checked in. Perhaps they would not like the area to be full. Anyhow, the sommelier and the Chef at the Vietnamese counter were friendly and we had some nice times or tasting experience.

    Honestly pretty disappointing French/European food. Amuse bouche was nothing impressive. Bread service was lackluster with low quality butter and mediocre bread. Appetizers were a bit redeeming with decent tartare, acceptable onion soup, and great gnocchi. Unfortunately, the beef wellington was terrible. The beef was cooked well but tasted extremely gamey. The puff pastry was unpleasantly thick and soggy. Truffle fries were oversalted and barely had any truffle taste.

    Among the best place in town for a Viet French fusion dining. Great ambiance with modern Indochina vibe, service is wonderful and friendly. My kind of place.

    Really nice atmosphere and beautifully decorated hotel and restaurant. The open kitchen areas are entertaining. In a vacuum this was a pretty decent dining experience but... The restaurant sits one level above some of the best Vietnamese food in the world at a fraction of the price and the food here is anything but the best. The Vietnamese options were mostly disappointing with some odd tasting sauces (the peanut sauce was OFF), some passable items like the papaya beef jerky salad and banh khot (although not nearly crispy enough on the edges) and one standout with the claypot salmon. The haikkado scallops were drenched in an incompatible sauce and while cooked to a perfect texture, lacked any actual flavor which was bizarre. Service was OK but slow and not very attentive. At one point we asked for some still water and the cup remained empty until we left. For the price, it is not worth it unless your priorities aren't good food.

    This place is overpriced for what they’re serving: food is not good and not worth the money. was really excited to try this restaurant due to all the amazing reviews online and the beautiful photos. This restaurant is located within the Park Hyatt Hotel. The ambience of the restaurant is beautiful, peaceful and well decorated. They have an array of items on the menu, the place was empty when we went for lunch, so not too crowded if you don’t like busy atmospheres. My friends and I all ordered wagyu, fries and rice. I was quite disappointed with the fried rice, it was oily and salty. Not very easy to eat. The Wagyu was also not very appeasing either - I had asked for medium rare and it was quite chewy and difficult to eat. I felt like the meat was wasted and I was upset about the experience. My friends did not enjoy their wagyu either. I would not recommend this place for their food but the interior is nice for photos. I enjoyed their bread the most.

    I didn’t expect a common Chinese dishes (from my knowledge) on a western style restaurant’s menu, out of my expectations. And it tastes like any fast food restaurant in Hong Kong. Other than that, it is fine.

    I really don’t mind paying a lot for a fine dining experience, but there is a certain expectation when an average plate of food costs someone in the vicinity of usd50-100, PLUS 10% VAT, PLUS service fee! Then of course there are the drinks on top plus vat and service ! So at this price point there is an expectation that the food is exceptional and the service faultless. Regrettably this was not our experience. On the plus side the staff are friendly and attentive (when you manage to get their attention) and the ambiance of the restaurant is also very good indeed. My partner chose fish ($50 for the plate, plus plus). The fish was badly cooked and she didn’t enjoy it. I had chicken. It was tender but had so much salt it was hard to overlook. A real highlight was the soup. A coconut and lobster bisque. Exceptional and one of the best things I’ve eaten in HCMC during my 2 years living in the city. Wine selection was good too. Expensive but that’s pretty standard in HCMC. There was a range of wine varieties from different regions which offered good choice. But I have to say the menu was very one dimensional. I found myself searching for something to choose, as opposed to being unable to choose between many tempting options. The service was also rather poor. The staff were rarely available when needed and only appeared when called. It took 15 minutes to pay the bill for example ! In summary for one of the most expensive restaurants in the city we were very very disappointed and would never go back which is all very disappointing because it was my partner’s birthday. This city really does need some premium quality restaurants, regrettably this restaurant falls short.

    This was one of the best meals I have had in HCMC. If I come back to Vietnam I would come here again and I would recommend friends and family to come here as well! The hotel really added to my experience - live piano and beautiful chandeliers from the roof. The martini bar down stairs is also really good for a drink before hand!

    Exceptional restaurant!! Fine dining with French, Vietnamese and close to a white glove service. The long wooden tables that are made of a single piece of wood is something to look at… Definitely a feature piece. The table side, preparations of salads and crêpes are a pièce de résistance!! I forgot my umbrella here and they left it for me to pick it up a few days later !!

    Hyatt is my comfort zone, where I always go to when I don’t want to expect anything wrong during my dining experience. With the crowd now because of their amazingly beautiful Christmas tree, I was almost afraid to come. Im glad I came today. The beef stew was amazing that I had to completed the whole plate. The service is nice and attentive. The ambiance is very comfortable. This is my place, and you never can go wrong with it.

    I dined at Square One last week for Le Petit Chef (LPC) menu. Good concept, (not that mindblowing but) solid food. What bugged me most was the service ( and sadly, i had thought higher of Hyatt than this). It was just 3 of us for LPC that night, but we had to come 30 mins in advance without proper reception and preparation. And hence, that led to a kinda interrupted show with the staff keep asking/ clarifying for our drink order. Our (baigur) gins on the rock were served with tiny rocks ( ****sigh****). Food served a bit slower pace than the vid content. I ordered an extra bday cake for the lil boy, which came the right min after they put desserts on table. The most annoying part was their pushing for payment to close the shop, thou we hadnt finished the meal. Im asking myself if its just my/our bad luck or Hyatt now being a few bars lower?

    One of the best restaurants in the city in regards to ambiance, food and service. I would recommend staying with seafood, meats and international cuisine. The reason for only 4 stars is that their Vietnamese dishes could be better for a Park Hyatt.

    Square One used to be my favorite restaurant in town. My last visit though has been a bit of a let down. Service is still great and the Beef Wellington is delicious. Other items on the menu were quite disappointing. The “new” Steak & Tuna Tartar recipe is just plain diced beef and tuna. No egg yolk, no capers, no acidity. It was just bland. Plus I’m no expert but what is the point of mixing two proteins like this? You can’t taste the beef, you can taste the tuna. It’s tartar not surf & turf. The Bone Marrow with braised beef cheek felt more like braised beef cheek with bone marrow. That’s not what I ordered. I was expecting a delicious decadent bone marrow with a side of braised beef. I ended up with overly seasoned braised beef with 4 patches of bone marrow. Where did the rest of the bone marrow go? It actually felt like the bones were cleaned up after each service to be reused in the next. Are they? God I hope not. Again I’m no foodie but I do hope that the Chef will take a bit of time to rethink his menu. If you’re going to change classic recipes, make sure to deliver. In the current menu, the Chef does not deliver.

    We had an excellent meal here on our first night in Saigon. My wife is gluten intolerant, and the staff bent over backwards to accommodate her dietary requirements, including by modifying dishes to substitute out soy sauce and even preparing spring rolls from scratch using rice paper. The food was delicious and portions were very generous.

    This happens to me all the time. I choose to come here to have ‘chic French’ meal but I always end up choosing ‘Vietnamese’ dish. Lol I guess I just love Vietnamese food so much that I forget why I came here for.

    Quite disappointed with the service (not only we had to wait for a while for service but glass of wine was poured super small, and when I confronted the waiter, she poured the second as small as the first). I am used to this kind of restaurants and 2 glasses are normally enough for me, I had to order 3). Nobody came to serve us water,... Again for this kind of restaurants, I expect much better. No worth the money

    Excellent dinner time. Wonderful, accommodating staff. Delicious Vietnamese food. wines are ok. However french desserts are way below our expectation after such a nice dinner. Mille feuilles should be done with proper puff pastry. The biscuit instead is dry, hard and very unpleasant to eat. Profiteroles would be nice, would they not add on top of the choux these big chunks of buckwheat… Hard to understand how these could end up on such a delicate dessert, where the milk ice cream was delicate, chocolate was not too sweet and nicely bitter & the choux on spot. It was clearly a disappointment after such a nice dinner, which is why only 4*. I really hope for an improvement of these desserts; they’re classical and straightforward French desserts. They shouldn’t bring so much disappointment!!

    I am a frequent guest as Square one and always enjoy the food and cosy space there. But i found the services not as a standard of the fine dining restaurant. I am not impressed by the warm and hospitality of the waiter here. Today i even felt disappointed on the waiter who brought me the bill... he dont even bother to give me a smile when i tks him and give the good tip. Maybe the very next time i come i will think twice... Mr. Ben

    Dinner here was really unpleasant. Chef was staring at me all the time like he was angry and I had to make a complaint. The staff were somewhat better, but they were always standing right across my table (and two others’, who were placed/cooped up in one tight corner in a huge empty restaurant) & kind of fixedly gaping at what was going on while I was eating, which made eating very awkward. It felt like I was being monitored by robots. Food was poor. The oysters from normandy were stale and smelled weird— i’ve had french oysters at duke’s in hcm and they were great— steak was not even on a par with outback steakhouse, no joke. It was seasoned to beef jerky level saltiness. Such a rip-off.

    I am a regular customer of park hyatt for 8 years and square one was one of my favorite restaurant so far but i had the worst experience today. onion soup : very salty and too much water. I cant believe it cooked at park hyatt. I complained it to manager but no proper apology. He didnt even say sorry for it. Crab noodle soup : it is very salty too and i cant find any crab inside,lobster wasnt cooked well and not fresh. Membership check in : manager was asking to us to show app and redeem the voucher right after we started eating and disturbed our eating moment. She had no idea to come before or after eating time. Dining area : Unlikely before, they assigned the reserved tables for membership all together and i felt they put their priority to serve on non membership tables rather than membership tables. It is quite ridiculous to see their disrespect to the loyalty customers. I loved park hyatt for my 8 years living in hochiminh city. But dinner tonigt was quite unpleasant. And i dont think i will renew my 4th membership again I also introduced it to many of my friends but i will not.
