I
want
to
write
something
nice
about
Amber,
but
I
CAN
NOT.
We
went
for
dinner
with
such
great
expectations.
I
recall
the
Amber
back
in
2014.
These
are
2
different
experiences
back
then
and
2023.
2023
Amber
is
a
tourist
trap
catering
to
Mainlanders.
Including
the
chef
kitchen
tour
and
photo
op
with
the
chef.
The
glaring
lighting
in
the
dining
room,
odd
background
music,
it
was
manufactured
atmosphere.
The
tourists
wearing
tennis
shoes,
their
shopping
bags,
t-shirts.
Some
came
in
what
looked
like
sleepwear.
The
wait
staff,
we
had
a
matronly
Philippina
waiting
on
us
(as
she
was
the
designated
English
speaker)
with
her
loud
booming
heavily
accented
voice
announcing
each
dish's
title,
with
no
comprehension
on
how
it
was
made,
where
the
food
was
sourced.
Her
every
announcement
herald
another
dish
which
we
were
yet
again
disappointed
with.
Each
plate
was
social
media
worthy
but
leaves
your
taste
buds
wanting.
The
food
came
in
uneven
pacing.
The
wine
list
has
a
200%
mark
up
and
if
you
study
the
list,
which
we
did
in
advance,
it
is
not
Michelin
worthy.
The
push
was
really
to
buy
the
2013
Dom
P.
We
ended
up
with
an
understated
bottle
of
Meursault,
retailing
at
a
wine
store
for
$1200
HKD
but
we
paid
the
200%
mark
up.
The
food
was
consistently
bland.
With
all
the
spices
available
here
in
Hong
Kong,
the
predominant
flavor
was
salt.
What
a
shame.
The
best
part
of
the
meal
was
the
baked
sour
dough
bread.
The
overall
flavor
pallette
reminded
me
of
Priority
Pass
airport
lounge
food
in
Amsterdam.
I
knew
it
was
not
a
good
start
when
the
amuse
bouche
was
thinly
sliced
flavorless
rabbit
food
coupled
with
what
tasted
like
Knopf
beef
cube
consomme.
While
the
food
was
well
plated
and
presented,
what
we
came
for
was
not
show
and
share
but
a
promised
Michelin
quality
meal.
It
was
not
that.
Would
I
return
to
Amber?
No.
My
hotel
executive
lounge
has
far
more
ambience
-
no
gestapo
style
lighting,
servers
there
are
discreet,
and
the
food
there
is
by
far
more
engaging,
because
it
has
flavor.
Yes,
this
is
a
harsh
review
but
after
spending
$19,000
HKD
worth,
my
time
and
1
evening,
let's
put
it
this
way,
I
paid
for
the
privilege
of
writing
this
review.
