This
is
the
kind
of
restaurant
you'll
rarely
find
even
in
Japan.
I
first
heard
about
it
last
July
or
August,
through
a
recommendation
from
Shelly.
At
that
time,
I
had
no
idea
how
to
go
about
making
a
reservation,
but
I
was
finally
able
to
secure
a
date
as
soon
as
I
got
some
tips
from
Valerie
about
the
process,
which
is
pretty
much
a
well-kept
secret.
But
the
reservation
will
generally
be
about
3-4
weeks
ahead.
This
restaurant
specializes
in
Japanese
sake.
Their
main
selling
point
is
not
their
food,
but
rather
their
sake
menu,
and
their
dishes
are
prepared
with
seasonal
ingredients
to
complement
the
sake.
I
personally
prefer
wine
over
sake,
and
never
really
found
sake
to
be
all
that
appealing.
But
who
would've
thought
that
my
encounter
with
this
restaurant,
in
Hong
Kong
nontheless,
to
completely
change
my
opinion
about
sake!
Rare
sake,
bottled
directly
in
Japan,
was
so
delicious,
and
served
at
the
perfect
temperature,
and
the
burst
of
flavor
in
my
mouth
almost
felt
like
flowers
blooming
with
each
sip
(my
personal
expression).
Some
types
were
served
cold,
and
others
served
hot,
but
all
were
just
perfect.
It
wasn't
just
the
sake
or
the
food
that
really
impressed
me
though.
Their
plateware
is
quite
maniac.
I
had
some
interesting
conversations
during
my
meal,
but
the
owner
of
the
restaurant,
Mr.
Kojima,
is
quite
the
enthusiast
of
valuable
items.
Some
of
the
plates
used
to
serve
their
food
is
over
100
years
old,
and
I
would
hate
to
imagine
the
kind
of
trouble
you
would
be
in
if
you
were
to
break,
or
damage
one
of
them!
Mr.
Kojima
closed
his
former
restaurant
in
Tokyo
and
moved
to
Hong
Kong,
with
the
wish
to
spread
his
love
for
Japanese
sake.
I
was
really
impressed
with
his
story,
and
truly
felt
like
I
wanted
to
continue
supporting
his
restaurant.
It's
really
great
to
know
that
there
are
restaurants
like
this
with
so
much
dedication
and
soul,
and
I
hope
to
keep
coming
back
here.
