    Probably the most difficult to make reservation restaurant in Hong Kong. The menu is mostly preset. You can choose 3 appetizers and 3 mains. The drunken crab is a must try although the 花雕is a big too heavy for me. Portion size are too much for small appetite eaters. Service is thoughtful. They have a trolley with boxes and bags. Seems like taking away food is not uncommon. Recommend but you will need to try your luck in making reservation.

    Undoubtedly one of the best Cantonese and Chinese restaurants anywhere in the world and should be a 2-3 star Michelin restaurant. The lack of stars is perplexing, reflects the shortcomings and culturally bias of the Michelin judges

    Ranked second in the top 50 restaurants in Asia 2020 ! Excellent and warm service with traditional Cantonese gourmet prepared to the very best standard . However, the number of seats are quite limited and thus advance booking is an essential! Moreover, if the timing of serving the dishes is adjusted and delivered in a bit slower pace then the guests can have more time to enjoy the technique and passion of the chefs so that the enjoyment can be brought to another level .

    The epitome of Cantonese cuisine, The Chairman thoroughly deserves it's reputation as one of the best in Asia. While their signature Flowery Crab with Aged ShaoXing Wine was delightful, the dishes that really took my breath away were the tender and perfectly charred Char Siu, and the fragrant Smoked black foot Goose. Service was excellent and the service staff could remember each diners' whims, a real plus point.

    Food was okay. Honestly it didn't really live up to expectations. It was a nice twist on classical Cantonese cuisine but it wasn't that delicious. Considering how difficult it was to get a reservation, I think there are better places in Hong Kong with just as good if not better food.

    Returned in October 2023 to a new space definitely nicer then the old space I went to couple of years back. Food is still good and really enjoyable . some of the favorites of mine included some not on the menu add ons recommended like the geoduck with “congee” like soup - I really liked this . And the stinky tofu was pretty shiok too , along with the pigs tails , steamed fish jaw and the pork Bao , and oh yummy the eel claypot rice was just a perfect way to end the meal. It's really places like that that reminds me about why I miss Cantonese, Chinese food in Hong Kong.

    First time since they moved and lucky to be invited and had a nice evening. Food was tasty in general, the pepper crab and the eel pot rice were the highlight. Though given the hype and the difficulty to book I feel the whole experience now is a bit overrated. There are plenty of great Chinese restaurants in HK to choose from if you don’t want to deal with the chaos to secure a table here.

    #1 in Asia 50 Best Restaurant 2021. Pre-ordered 6 dishes by my friend, but they messed up and only were able to provide 1 pre-ordered dish and the rest had to be ordered from the menu. No doubt it’s a good good. But is it very special like you kind of look forward for your visit few weeks in advance? Not for me. It’s a decent neighbourhood local restaurant at its best. Honestly quite disappointing.

    Didn't think it was possible but we were able to get a reservation on the same day for dinner. This place seems small but it has two floors and each floor has couple rooms so there's a good amount of tables. Felt like there's mainly tourist there, I guess everyone wants to try the Asia top 50 restaurant. We got the flower crabs with the flat noodle in wine and chicken stock, amazing...best crab dish I've ever had so far. You can smell the wine as soon as the dish came out, the chicken stock with wine sauce was tasty. I can eat bowls of those rice noodles soaked in the chicken stock, not to mention the crab was mighty fresh and sweet. We also got the soy sauce chicken and the ribs in plum sauce which were ok. However, their veggie dish with bean curd and fried dough on top was unique and surprisingly good. Not a fan of the desserts, I would go back to try their other dishes but not the desserts

    We were lucky to get a table reservation only 2 days prior. At first glance from the exterior I was skeptical of the high praises this place garnered. But once inside I was very impressed. From the servers buzzing up and down the stairs, to placing orders, to the dish presentations. Everything is first class. I really like the way the servers helped describing the dishes, the ingredients, and the reasons behind the chefs creating the dishes. The signature dish of the Flower crab did not disappoint, as was the tea smoked pigeon and all other dishes. But the highlight for me was actually the almond tea drink. All I can say is "Wow". I didn't know that the almond tea can have so much depth with such intense yet delicate flavor. What a delight to finish the meal with this drink. Definitely a must visit in Hong Kong. Book early though.

    Very top Cantonese restaurant with fairly fancy & innovative cooking styles. Without doubt, most of dishes were yummy. In comparison, unfortunately tastes were even better a year ago. Steam crab in yellow wine was almost excellent while the accompanying rice noodle was more enticing as it absorbed the rich sauce of this dish. Steam razor clam was hard to fail as long as the shell fish was fresh. The 2-way cooking of roasted chicken was yummy & interesting to taste buds. Amongst all dishes of the night, the roasted liver with fat was disappointing as it’s not properly marinated, infused with the “rose” liquor & the liver was fairly dry & rough. Prices for the dinner were absolutely expensive but the quality of services not commensurate with their high price tags. One star then been removed from last rating.

    Great traditional Cantonese food. Restaurant uses high quality produce in their dishes. The steamed fresh flower crab with aged shaoxing wine is a must if you go. Staff are friendly and whilst it's a premium place due to the price it's casual inside (no dress code). It's pricey, but if you want to splurge for a special occasion, it's definitely worth it.

    Great service. Ate there with a group of 5. Server was mindful that I don't eat prawns and lobsters, so he helped to remove all trace of them in individual servings.
