    An omakase experience that features double digit sushi pieces and double digit small dishes with three desserts. The meal service is an orchestrated affair combining sushi made at the counter interlaced with small dishes from the kitchen in the back. While the sheer amount of courses is impressive, the meal is not at all about the quantity. For example, a fresh small batch of rice is brought out from the back for each piece of sushi per group of diners. The ingredients are thoughtful as well, using hearts of palm instead of ginger for a more local twist. The chef is very knowledgeable about the ingredients and suggested sake pairings for the various portions of the course.

    This is a review of their takeout: Stayed at the hotel January 2023 and would NOT recommend ordering the chirashi takeout. Staff was very pleasant on pickup and it came beautifully packaged but it honestly seemed like they used scraps/undesirable cuts of fish. I’ve never had a chirashi that was so inconsistent with some bites tasting good to some tasting very stale, fishy, and off. The mushroom was actually the best tasting part of the takeout. I’m sure the dine in is a completely different experience, but wish they would not offer takeout for $40 based on this quality.

    This place is fantastic! It's a true authentic Japanese Edomae (Tokyo) style sushi that probably you don't get at any other place. The price is a bit high, that I only can afford to go there once a month (T T) it is all include set price of $300 a person, no tax, no tip is required because all that is included. I know that sound pricy, but if you really love Japanese authentic sushi, you will feel that the price is right. To me this place is much better than NOBU, MORIMOTO or ONODERA.

    Worth every penny! I love the sushi here and the chef was fantastic! It made our Hawaii trip more special! One thing to notice is that don’t take chef’s picture when chef is working. You can ask to have a photo together after the experience. (The price included tips)

    Hands down to the chefs at Sushi Sho, thank you Chef Nakazawa for the impeccable omakase. Excellence from the start, the ambiance, the COVID protocol, the service, the start, middle and finish of the meal was just perfection. If you are able to get a reservation, do so! The price is well worth the unique experience. The quality of the seafood and the pairing of sake was incredible, too bad I wasn’t hungry enough to continue to order after the omakase courses. Yokina-san from the front desk at the Ritz Carlton was very kind to send a request for a last minute reservation. Luckily enough, she got the reply for availability for the following evening and was able to dine in.

    The sushi is tops here. I loved it. Note that they use some local ingredients (e.g. Maui onion, ginger limes, etc.) to season so it’s not straight up Edo-style. I think I counted around 30 courses. We made reservations for two about three months out and had to call a couple of times during the posted times for making reservations before someone answered the phone. We were the only English-speaking customers that night, and most of the staff seemed to be Japanese, but we were assigned an English speaking staff member (she was awesome) to translate as needed. Awesome experience!!!

    This is for the takeout experience during COVID times. We ordered a Sushi Sho special bento and a bar chirashi. The bento itself actually had a Kaisen bara chirashi and an edomae bara chirashi as well, and both were fresh and tasty. The appetizers included were all meticulously prepared and showcased a variety of flavors. Overall, the special bento is a great way to try a lot of different dishes in one meal.

    We had Bara Chirashi($40) and Futomaki($40). Bara Chirashi was somewhat different we have had in mainland but I liked its own style. Fishes were small pieces and it might causes that people don't like it but it is its own traditional style. The overall quality was good, taste was good (not fantastic), but the price was expensive for take out menu.

    Old time Chinese favorites with a modern twist at a great price. Huge portions, so you either need to be hungry or can easily split your plate with someone. Orange chicken is my go to item. Can get busy at times and may need to wait awhile for items that are being freshly made, while you wait.

    Without a doubt, one of the greatest dining experiences I ever had. Myself and a small group of friends decided to treat ourselves to this unique luxury experience. I spent a whole lot money by myself and I would gladly do it again and again. We were treated like royalty to boot. Service unquestionably superb. I cannot recommend this locale enough. Enjoy

    It's quite an experience and I'm not even sure where to begin. Sushi Sho is doing something different than many of the other sushi locations around town. The menu flow from lighter bites to fattier ones was just outstanding and shows the knowledge of the sushi chef. The menu changes frequently from what I was told. I'll definitely be back again.

    Simply amazing. They used local and Japanese seafood, together with other local ingredients for their sushi. Unique and delicious. I have to say every single dish out of the 18 courses are of top quality. You have options to top up extra pieces towards the end of the Omakase, and the add ons are at $10 each, surprisingly good price (should have add on more) Chef communicates perfectly in English, and very professional in explaining all the details to non Japanese speakers like me, very impressive. Worth mentioning, Sushi Shi’s $350 course is inclusive of tax and gratitude! Customers are not to pay tips on top.

(Original) 今回ハワイに来た目的の一つが、ここすし匠。2年前に来たときには予約が取れなくて、今回は念願かなっての訪店。ワイキキに2016年誕生したリッツカールトンのロビーフロアにある。導線が少し変わっていて、バースタイルのビストロを抜けた奥に「すし匠」の表札とガラス戸がある。完全に自分のミスであるのだが、予約時間を間違えて20分遅刻。嫌な顔ひとつせず、むしろ笑顔で迎えてくれた店員さん、中澤さんに感謝。 店内は八角形型のカウンターがメイン。別室にカウンター個室がもう一つあるようだ。八角形型ののカウンターは覚えている限り10〜11人がけ。ど真ん中の3席が空いており、そちらに誘われた。(遅刻したのに、ホント申し訳ない)コースはお任せのみ。ドリンクは日本酒をこちらもおまかせで。おそらくペアリングのコースになったのではと思う。最初のお酒はスパークリングの濁り酒「雁木」。 かんたんな挨拶の後、さっそくコースが始まる。最初に出てくるのは牡蠣。ワシントン州のオイスターを少し煮浸しにしたもの。小ぶりながら旨味があって、爽やかで。初っ端からレベルが高い。続いて椰子の実の芯?にしょうがを加えたものが。これはガリの代わりかな。これはちょいちょいとつまみながら、刺し身の盛りが登場。すし匠風Poke3種。覚えている限り、マグロ、鯛、そしてサーモン。きっちり仕事が加えてあり、燻製の香りが心地よい。 丁寧にご飯を詰めたヤリイカが出てきた。見た目はイカ飯。中澤さんも「イカ飯」とおっしゃっていたので、それでいいんだろう 笑。続いて出てきたのがクレソンの上にミル貝の乗った一品。少し濃い目のイカ飯のあとにさっぱりとした一皿を出してくるのがいい。ここで日本酒が2種類目に。黒龍酒造のの「龍」。合わせるかのように、この日1つ目の握りは小鯛のミモザ風。さっぱりとした口当たり。 遅刻してしまったためか、ハイペースで出てくるが、気にならないぐらい接客が気持ちいい。すし匠の特徴といえば、ツマミと握りが交互に出てくるスタイル。ここからは出てきたものをずらずらと覚えている限り。一つ一つは決して大きいわけではないけど、バリエーションが豊かだしストーリーがあって本当に面白い。 ・ハプープの刺し身。日本で言うところのハタ。クルッと巻いて食べやすく。 ・ボタンエビの握り。濃厚でねっとりとした口当たりが気持ちいい ・ミル貝のレバー。マウイオニオンとわさびが少し乗って。レバ刺し感覚で、と言われたが、鮨屋でレバ刺しって食べないよね ・カッパーリバーサーモンの握り。日本で食べるサーモンとはぜんぜん違う、口当たりはあっさりとしていながら濃厚な味わいのサーモン。 ・ラウラウのすし匠風アレンジ。アスパラガスのソースを下に、上には土佐酢のジュレを。さっぱりと食べられる一品。 ・マグロのづけ(握り)。 ・イワシの巻物。新生姜とキューカンバー、シソを一緒に。大事なのはきゅうりじゃなくてキューカンバーってところ。こちらのキューカンバーは食感も味も日本のきゅうりよりもウリに近い。 ここらで次の日本酒。日高見の芳醇辛口純米吟醸「弥助」。花柳界ではお鮨のことを「弥助」と呼ぶらしく、このお酒はお鮨によく合う日本酒のようだ。なぜ弥助というのか、そのあたりのストーリーは中澤さんが丁寧に教えてくれる。こういった端々の会話もすごく勉強になった。 ・うにの握り。サンタバーバラさんのウニは本当に秀逸! ・キューカンバーの浅漬。ちょっとだけ鰹節を添えて ・ダンジネスクラブの握り。 ・タロイモのごま豆腐。上に乗っているのはニシンの卵。 ・マグロ、背びれの下 ・酔っぱらいロブスター。メイン州のロブスターを生きたまま1週間、紹興酒につけたもの。 続いての日本酒は「Ice Breaker」。京都は木下酒造が手掛ける夏のお酒。杜氏さんがアメリカ人という変わった酒造メーカー。ロックで飲むのがおすすめということで、珍しく日本酒のロック。味わいは濃いけど、後味がスッキリしている。飲んでいる間に味が変わるのもロックならでは。酔っぱらいロブスターをツマミに、日本酒を飲んで酔っ払う。 ・モイ。ハワイでは王の魚と言われる高級魚。これを3週間発酵させ飯寿司にしている。発酵から出てくる自然な酸味が心地よい。 ・チェリートマトのピクルス ・アカマンボウのフィンガーライムのせ。アカマンボウは酒粕とお味噌につけて焼き上げたもの。フィンガーライムは初めて見たが、果肉を絞り出す仕草もいいし、味わいも良かった。ちょっとグレープフルーツに似た味わい。最近は「シトラスキャビア」なんて言ってるお店もあるらしい。 ・10日ほど寝かせたマグロの霜降り。ねっとりと絡みつく旨さ。 ・イチゴ蒸し(アワビ、サンタバーバラ産のウニ、松茸、フランスのホワイトキャビア)。茶碗蒸しのようだがガッツリと食材が入っている。それぞれ主張の強い具材だが、意外なほどにマッチ。 続いてのお酒は梵(BORN)。無濾過生原酒。食べるお酒のような芳醇さ。 ・あん肝とスイカの奈良漬け(あん肝スイカ)。あん肝はボストンから。キメが細かいあん肝にスイカがよく合う。しかも、めちゃくちゃ柔らかく仕上がっている。 ・松前漬け。海苔に巻いて、一口で。 ・通称「おはぎ」。マグロの中落ちと皮ぎし。これにタクアンとマウイオニオンを叩いて混ぜて、上にマカダミアナッツを載せている。これはやばい一品だった。すし匠を代表するお鮨の一つ。 日本酒がいいペースで進む。続いては先程の梵の超吟。5年間氷の中で寝かせたお酒で、天皇陛下に献上してるとかいないとか。これをいただくときは、天皇陛下になったつもりで飲みましょう 笑 そろそろコースが終盤に差し掛かり、追加で出せるものの説明が。チェリーストーンクラムや煮ホタテ、ソフトシェルなど。「悔いのないように」という大将の声に後押しを受け、アジを選択。 ・アジ ・いぶりがっこの一品は通称「シャリチー」。シャリで作ったチーズをいぶりがっこで包んでいる ・青パパイヤの干瓢巻き。これが美味い! ・卵焼きが2つ。一つはクラムスープのだし巻き、もう一つはモロカイとタロイモの卵焼き 最後のデザートは葛きり。塩ミルクアイスも選べたが、やっぱり葛切りがいいね。 本当に素晴らしいコースだった。全部で29品かな?出てくる料理は一品一品のレベルが高く、またストーリー性が素晴らしい。飽きさせないし、食べごたえがある。かと言って多すぎるわけではない。 中澤さんの人柄もあるが、お話が上手いし、本当に笑いの耐えない2時間半だった。またハワイに来ることがあれば必ず行きたいお店の一つ。おすすめです!

    I had the takeout of Bara Chirashi and Futomaki scheduled for 4:30pm pickup. The food was delicious, with a good mix of ingredients. The only exception is that they didn't feel fresh to me, as if they were made and sat for 30 min or 1 hr. I was there on time, so it wasn't due late pickup. So deducting a star just for this problem.

    This place is booked out at least a month out so make sure to make your reservations early! Hands down the best omakase on the island. Everything is fresh and beautifully presented. They also have a great selection of alcohol to pair with your meal. If you have a special request and want to order additional servings of a particular dish, you may call ahead to request it in advance for their party. I try to eat here a few times a year and am never disappointed.

    I ordered food in the morning when they just opened. I couldn't believe how dirty the tables were! You would think they would have cleaned them the night before or in the morning before they opened the doors..🙄 and I saw one of the workers standing on a chair filling the ice machine, after she was done she just pushed the chair back to the table. She didn't even bother wiping it down. So unsanitary. Food wasn't that great tasting either. Think it might have been left over from the previous day.

    I always go to this Panda's instead of the one at the next door Windward Mall since this one isn't located next to a pet store. Sorry, but I can't get the smell of a pet store out of my system while trying to enjoy lunch. If I were them, I would try to move their location to the food court. This location is very busy. The customer service is great, they always offer a free sample, I like their quick service, clean bathrooms. The food consistently tastes fresh and tasty. Their tables are always clean but sometime some of the chairs need to be wiped more carefully. but that can't always be done when the place is very busy.

    this is the best sushi I have ever had, chef Nekazawa was super friendly and this place offers sushi that has both Japanese and local ingredients, so you can never get similar experience elsewhere. For the omakase experience, all you need to do is just sit there and enjoy everything chef places in front of you. The monk fish liver and the minced otoro sushi is the best I have ever had.

    Absolutely floored by this spot. Don’t get sticker shock because of the price. While it is steep, it is 100% worth every penny. This has got to be in my top 3 sushi experiences I’ve ever been to.     Staying at the Ritz Carlton. Went to eat here. Food was good. We ordered the chef’s special and about course 4 of 16 they brought something that me or my date couldn’t stomach. At this point, I spoke to the manager and explained that I could not handle the food and that I would gladly pay for my food but could not proceed with other 12 courses. I got my bill and it was for the full course. I would expect this from Applebee’s or Chili’s but not from one of the highest rated restaurants in the world. I was very disappointed by this. I paid but am very disappointed at the fact they charged me for the full meal even though they didn’t prepare 3/4 or the meal, not offer another option or do anything at all to make my experience more bearable.     Sushi Sho definitely the best Omakase I ever had in the US. I felt very lucky I got a reservation and had an amazing experience. Food: Top notch ingredients from local Hawaii and all over the world. Every single dish you can tell Chef Keiji has put lots thoughts into it. Paring Sake: Delicious! Chef will help choose each individual sake. Service: Everyone is super nice! Worth every single penny for the experience! Highly recommend and I will definitely come here again!

    The lady helping me with my order had extreme difficulty comprehending what I wanted. I ordered 2 plates with 2 choices. She seemed to understand what i wanted at first but then before she finished with putting the food i wanted she kept asking me to pay first. She asked me SIX times if I wanted to pay & SIX times I had to ask her to complete my order. Maybe if she spent more time with my order than asking me to pay she would have gotten my order correct. I spent almost 20 minutes there trying to get what I wanted & it wasn't at all busy. My wife & I enjoy there food but today's experience was BRUTAL.
