Even though 5 stars might be for granted given the level of haute cuisine, it still amazes me how everything was truly fantastic. From the attentive yet genuine and talkative staff, to the nice mellow French music, to the interior so minimalistic but warm. Then the food, 7 main dishes preceded and followed by a series of smaller samples that really showcased the range of creativity in the kitchen. A total of 18 different explosive combinations. A special praise for the focus on seasonal and locally sourced ingredients. So hard to pick a favorite dish, in each of them something was truly a memorable experience, may that be an unconventional pairing, a texture, an aftertaste. Really impressive. Expensive but worth it.

To say that Vollmers is the best restaurant in Malmö is a bit like saying Superman is the strongest person raised in Kansas: it doesn't do either superhero justice. Vollmers would be an top restaurant in any major city in the world. The dishes are never heavy, consistently creative, excellent representatives of the local region (insofar as possible), and always delicious. The sweetbread dish, for example, was genuinely the best I have ever tasted. If you're in the area then Vollmers is a "must visit".

Finally went to Vollmers and it was so worth the wait. Excellent service and amazing food. The staff was so nice, good at explaining, and overall really great. The food was very varied, great presentation and so tasty. The restaurant itself was very cozy and the chairs very comfy. I would recommend this restaurant to anyone wanting a fine dining experience.

Amazing. Great food. Great service. Straight thru a perfect dinner. The food is, of course, world class combined with the pairing. The service was amazing, attentive, and just the right amount of presence at the right time. Excellent atmosphere. Just loved it ❤️.

It was quite an experience at Vollmers in Malmo. The service was fantastic, and we were received even before we reached the restaurant. The restaurant had an impressive repertoire for the evening, which included 100-year old bread, various seafood dishes containing local herbs and cheese. They even included a map to show what the ingredients were collected, and the restaurant is a frontline model for future sustainable dining experience. We didn't give 5 stars because we felt the dishes were too heavy on the acidity and sweetness, and we didn't catch a break from one course to another.

Service, food and wine on point! I ripped one star because one of the dishes was to salty, probably a one-time problem so don't worry to much about that. If you're into fine dining Vollmers is absolutely worth a visit!

A cozy restaurant with warm service. The local products from Skåne were highlighted so well and seamlessly here. I thought the dishes were a great blend of traditional and modern. Also, Krug by the glass is a nice touch, but don’t hesitate getting the juice pairing. I find some fine dining places make juices that can be quite heavy and acidic after awhile, but I found the juices here to be light and refreshing. I will definitely find my way back here someday.

Easily the best restaurant in Malmö. Very ambitious food an friendly staff without even being remotely pretentious. I would strongly recommend a visit.

Amazing experience! Perfect food and great service. Hope to go again, definitely worth visiting Malmö just to go here! The photos are of the first starter snacks.

First class service from the moment we were at the door until we got our jackets on at the end of our visit. Superb food and drinks, both alcoholic and non alcoholics. Great pairing of non alcoholic juices to the food. According to my company who had a wine package, it was also the case with the wines. The Entire visit was just as expected from a 2 Michelin star restaurant.

17 courses!!! It was almost a luxury problem to sit for 4 hours and enjoying all the exceptional dishes they served when we were there. The funny thing was the seafood/fish and vegetarian dishes were the ones that shone the most to us. The meat dishes were great but nothing compared to the silver onion, cabbage and the tarragon foam! That was simply great and the smoked langoustine definitely stole the show! We came in wearing sweaters, jeans and sneakers but most guests here were in black dresses and men in jackets, almost felt like they came from a funeral. I asked the one of servers and he said there was no dress code and the atmosphere should be relaxed, so fear not! No need to dress to your teeth to come here! (I’ve been to fine dining restaurants in Denmark and they are mostly casual) All in all, superb experience, well worth the expenses

Reason enough to travel to Malmö! Excellent food, some dishes are at 3* level, all ingredients locally sourced. Excellent service. Great wine list. We’ll worth the price!

We had an amazing experience at Vollmers. The presentation of the food, the ambience, the quality of the ingredients all sourced from nearby farms in mainly Skåne, and of course the staff - who were incredibly attentive, kind and fun, without in any way being stiff or overly formal - made this place one of our absolute top dinner experiences ever. The two michelin stars are well deserved and we are very grateful we finally got to experience a dinner at Vollmers. Even our 2,5 year old enjoyed, tasted most of the very exciting and inventive dishes, and got her own specially adaptedbowl of ice cream at the end - and despite the fine dining setting we didn't at any moment feel unwelcome or uncomfortable with a toddler, as the staff did everything to make our experience as enjoyable as possible. Huge thank you to Karin, Manager and head Sommelier, for taking the time to chat and making us feel like family. We'll be back!

I have been to many restaurants in the Micheline guide, only one resulting in food poisoning for me and everyone else I was there with, namely Vollmers. Disregarding the food poisoning however I must say that Vollmers was great. Excellent service and of course great food. But not worth me and my family being sick for nearly a week with Vollmers offering one free meal in the future as compensation….

Amazing 2 star Michelin restaurant in Malmø. You get sublime service, food and drinks. Will recommend this restaurant to anyone who wants to explore a true 2-star restaurant. Whole experience was an unforgettable evening and the money you pay is nothing compared to other 2 star places. Enjoy! 👍

We had a fantastic food- & drink experience at Vollmers. Staff was also great feeling the atmosphere making our experience very relaxed and not “2 Michelin star stiff”. Not cheap but worth every crown knowing the hard work behind the scene. Perfect and brave pairing of food and wine. Also nice to meet the chefs in the small cosy dining hall presenting their food. Probably missed to photograph some dishes but here comes some of them.

Herzlicher Empfang, perfekter Service , köstliches, regionales Essen … Tradition trifft auf Moderne. Spannend, die einzelnen Zutaten zu schmecken … die Weinbegleitung sensationell abgestimmt … ein Genuss für die Sinne.

We've had a great time with excellent food: fresh, creative, local and super delicious. My favorite (if I was forced to name one) was the waffles with the mackerel & the little tarte with the kale (OK, I couldn't decide). We got introduced to an absolutely beautiful swedish wine (by Flyinge vingard) and the staff was knowledgeable and very friendly. The wonderful experience almost made us dry the tears we spilled over the steep bill ;). Thank you for a wonderful time

What an experience! The dishes in this restaurant will take you on adventure - be prepared to be amazed by the creativity and variety of flavors! Excellent wine pairings, and the staff is super enthusiastic and knowledgeable. And, probably the best sourdough bread and butter in all of Scandinavia! Highly recommend this marathon of mouthfeel - but be prepared to stay 4-5 hours!

Vollmers 2* à Malmö, Sweden May 2022 In the middle of a commercial street, lies a beautiful house with a fabulous restaurant that is absolutely worth the trip. It’s called VOLLMERS ! Karin and Matts have created it and together, they do excell on everything. Matts and Ebbe plus a fantastic team in the kitchen, inventing and re-inventing a locavore cuisine based on ingredients coming from all around their region. On the menu, each course mentions how many KM the ingredients have travelled to end up on your plate. And the closest are some herbs they gather from the local park (during the night as if they did it during the day, people would find it very strange to see cooks cutting weed with their little scissors). Between the dishes we had, some ingredients had been aged or curated or fermented for days, weeks, months, even years. Each dish was as complex as interesting, the flavours were bold and full, their cuisine is one of passion and of love for real good cuisine. In the room, Karin is the Queen. I can describe her as a mix of three women ; the authority and class of Robin Weight in House of Cards ; the look and charm of Roxette ; the intelligence and hard work of a younger Christine Balanski in the Good Fight. She’s just just fabulous. Her collegues are very precise in the presentation of the wines and the dishes. An excellent sommelier also. I must point out that lot only was the wine pairing interesting, but the nonalcoholic pairing was also. It’s really not always the case. Many non alcoholic pairings we had tried were too sweet, too acidic, too strong overall. Here the fragrances were perfect, the intensity of the beverages too. I especially liked tasting the fig water that Joe received with his first course. I was finishing my cup of Agrapart (they are the only restaurant in Sweden to have some by the glass). The meal was fantastic from beginning to the end. The highest point were the squid and potatoe, cooked very precisely so that both obtain the same resistance under the tooth, the beautiful breme with the forest of herbs and surprises under and it’s gorgeous green sauce, and most of all the white asparagus, an amazing combination of visual beauty, odor and taste ! Three stars on this plate, and I would say probably soon on the whole menu. Great house ! Tak!!!

One of the great Scandinavian culinary experiences. The food is a well thought out trip through a myriad of flavours and the wine selection is top also. On my last visit they didn't have the red I selected but replaced it with a better bottle at the same cost - says what you need to know about this service. Couldn't recommend enough and will be back in a different season for sure.
