I
could
give
them
6
stars
I
would
(let's
just
say
the
6th
one
is
reserved
for
their
upcoming
third
Michelin
star).
The
experience
was
absolute
nirvana
-
the
care
that
the
staff
provides
is
unparalleled,
my
partner
was
unfortunately
having
a
mild
reaction
to
the
alcohol
residuals
in
the
pairings
and
the
whole
team
cared
for
her
like
you
would
care
for
a
family
member.
Surprise
and
mystique
are
always
part
of
the
experience
in
such
a
restaurant,
but
the
trio
at
Disfrutar
takes
it
one
step
further.
Each
technique,
while
complex
and
appreciable
sans
rien,
serves
to
exemplify
the
dinning
experience
rather
than
shock
unnecessarily.
For
those
with
a
more
developed
palate
I
would
recommend
the
festival
menu
as
it
contains
much
of
the
highlights
from
the
classic
and
experiments
more
with
flavour
profiles
and
textures.
The
classic
is
of
course
a
phenomenal,
well
paced
and
refined
experience
that
explores
Spanish
classics
in
a
new
light
with
a
few
dishes
inspired
by
Japanese
and
French
country-side
cuisine.
The
wine
pairing
provides
the
perfect
supplement
to
each
dish
(complementary
rather
than
individualistic),
you'll
find
some
choices
such
as
the
Sake
that
will
surprise
even
the
most
well-versed
drinker
with
exceptionally
broad
choices
of
vintages.
Nirvana
is
honestly
what
I
would
use
to
summarize
my
experience
at
Disfrutar.
Here's
to
many
more
years
of
such
exceptionalism.

course
as
some
could
be
considered
"spoilers"
in
my
opinion,
the
menus
are
23-28
courses.
Some
are
from
the
festival
and
some
from
the
classic,
wines
will
look
the
same
regardless
of
a
picture
-
trust
the
sommelier(s).
