Bincho
Boss
is
a
modern
Japanese
eatery
and
one
of
my
favourite
Izakaya
restaurants.
As
the
name
suggests,
their
signature
cooking
method
is
over
binchotan
bringing
out
incredible
flavors
and
aromas.
The
menu
offers
a
diverse
selection
of
à
la
carte
and
set
menu
options,
accompanied
by
an
impressive
list
of
sake,
wines
and
cocktails.
The
vibes
here
are
laid-back
yet
semi-fancy,
and
the
service
is
always
fantastic.
We
started
the
night
with
their
fresh
selection
of
assorted
sashimi
[$55],
followed
by
wagyu
nigiri
[$34],
and
steamed
saké
clams
[$30].
The
clams
were
so
flavourful,
I
wanted
to
just
pick
up
the
plate
and
drink
the
broth.
We
probably
should've
passed
on
the
nigiri,
as
we
ordered
a
much
higher
grade
of
wagyu
as
a
main.
From
the
bincho
grill,
we
kicked
off
with
their
corn
ribs
[$25]
and
assorted
skewers
platter
[$39],
featuring
wagyu,
chicken
and
pork
skewers.
Each
piece
of
meat
was
a
burst
of
umami,
smoky,
and
caramelized
goodness
-
a
must-order
✨
Next,
was
my
favourite
dish
of
the
night,
the
A5
Kagoshima
wagyu
[$90]
cooked
to
absolute
perfection!

Rich
and
tender,
literal
melt-in-your-mouth
wagyu,
contrasted
by
a
beautiful
light
crispiness
on
the
outer
layer.
This,
and
a
bowl
of
steamed
rice...
I'd
be
happy
with
this
as
my
last
meal
on
Earth
😌
we
also
got
a
serving
of
their
whole
lobster
[$150]
-
incredibly
delicious
natural
flavours,
but
I
would've
preferred
if
the
lobster
was
creamier.
The
dessert
to
end
the
night
was
the
matcha
and
chocolate
terrine
with
sweet
red
bean
[$15],
and
my
go-to
drink
every
time
I
come
is
(surprise,
surprise)
their
Yuzu
Sour.
