and
Jörg
Pierach,
owners
of
Herbst
Eatery
&
Farm
Stand,
have
done
a
remarkable
job
of
renovating
this
historic
building.
First
heard
about
this
new
eatery
in
April
2023.
We
tried
a
few
times
to
get
weekend
evening
reservations
but
did
not
try
soon
enough.
My
daughter
picked
this
up
and
secured
a
reservation
about
four
weeks
out.
Having
been
there
now,
we
see
why
ding
here
is
so
popular.
There
were
four
of
us,
making
it
easy
to
try
and
share
more
appetizers.
We
all
loved
the
Chicken
Liver
Mouse,
as
well
as
the
Heirloom
Melon
that
comes
with
puffed
wild
rice
in
bay
leaf
oat
cream.
Unimaginable
flavors
–
so
good,
you
must
try
them
for
yourself.
The
grilled
lamb
is
incredible.
I
ordered
the
Sea
Bass,
which
is
prepared
with
charred
kale
and
served
in
a
green
chile
crema.
Actually,
everyone
enjoyed
their
entrees.
I
had
the
aperitif
cocktail
“Ercole”;
they
kindly
halved
the
alcohol
for
me.
It
was
a
totally
new
flavor
and
very
refreshing.
Others
in
my
party
enjoyed
the
“seasonal”
and
“funky”
custom-made
beverages.
Many
of
the
entrees
on
the
menu
use
ingredients
sourced
from
Dover
Producers
and
the
Wisconsin
Growers
Cooperative.
We’ve
known
several
of
these
farmers
from
our
travels,
and
this
makes
us
all
the
more
eager
to
support
the
Herbst.
Everything
we
had
was
remarkably
fresh.
The
store
part
was
already
closed,
but
I’ll
definitely
be
back
to
try
a
few
items.
I
love
eating
organically
when
possible.
Our
host
and
waiter
were
proud
to
tell
us
how
they
use
sustainably
and
ethically
raise
animals
for
non-GMO
lamb,
beef,
and
pork
entrees
that
rotate
on
the
menu.
Parking
can
be
a
challenge.
Give
yourself
time
to
walk
a
few
blocks
if
necessary.
It
is
certainly
worth
it!
