We
came
back
to
this
restaurant
for
the
first
time
after
the
start
of
the
pandemic
(as
we
live
in
the
UK)
and
we
had
the
New
Year
Eve
dinner,
which
was
made
of
8
courses.
I
had
the
vegetarian
option.
All
dishes
were
usually
made
of
3-4
components,
you
could
see
the
work
was
put
in
the
preparation
however
despite
that,
all
was
served
on
time
and
with
spotless
attention
to
details.
Being
Sicilian,
I
know
what
are
the
flavours
I
am
expecting
and
Salvo
(the
chef)
delivered
all
those
flavours
with
a
great
determination
but
also
gentleness
Jerusalem
artichoke,
chicory,
lentils,
saffron
and
many
others
very
local
products
were
cooked,
mixed
and/or
arranged
together
in
a
way
that
reminded
me
my
past
when
I
used
to
leave
on
the
island
and
had
lunches
with
my
all
family.
Many
of
the
flavours
of
that
night
will
stay
with
me
for
a
long
time,
but
one
dish
was
emblematic
of
this
experience:
the
Sorbetto
All'Arancia,
the
way
the
orange,
spring
onion
and
fennel
were
prepared
together
in
a
sorbet
is
a
pure
example
of
the
chef's
creativity
which
resulted
in
the
harmony
I
always
hope
to
find
in
a
dish.
I
also
would
like
to
mention
that
this
was
one
of
my
best
experiences
in
a
restaurant
since
I
have
been
vegetarian
(I
did
phone
in
advance
to
let
the
chef
know
tough)
We
had
2
friends
on
our
table
with
a
solid
knowledge
of
wine
and
they
found
3
great
wines
from
a
very
long
wine
list
which
were
simply
amazing.
Thanks
to
the
Chef
Salvo
and
all
the
staff,
we
had
a
great
experience
and
will
be
back
asap!!
