My
spouse
and
I
visited
Nicole’s
Table
on
12/23/2022
and
were
impressed
with
the
stunning
views
and
friendly
atmosphere
from
the
minute
we
walked
in.
We
were
greeted
with
an
offer
for
some
passion
fruit
juice
or
a
cold
glass
of
water
upon
arrival
and
then
were
able
to
relax
for
a
bit
and
enjoy
the
beautiful
patio
as
we
waited
for
the
rest
of
the
participants
to
arrive.
It
was
evident
from
the
start
of
our
Cooking
with
Rum
Class
that
Nicole
is
an
extremely
talented
chef
and
that
she
was
going
to
make
our
day
fun
and
engaging.
We
were
able
to
enjoy
our
low
key
instruction
with
another
couple
and
were
fortunate
enough
to
have
an
extended,
multi-generational
family
(some
who
were
from
Antigua
and
still
lived
there)
also
join
the
class.
As
we
all
tagged
team
and
made
our
way
through
our
recipes
with
Nicole
and
her
assistant
Iana
we
snacked
on
Nicole’s
Tostones
with
a
yummy
dip
and
then
got
to
a
point
where
our
group
was
able
to
continue
to
join
in
with
some
of
the
finishing
touches
on
our
meal
or
take
Nicole’s
husband,
Adam,
up
on
an
offer
to
do
a
rum
tasting.
We
choose
the
rum
tasting
and
it
did
not
disappoint.
Adam
is
knowledgeable
and
passionate
about
rum
and
the
island
of
Antigua.
He
cleverly
mixed
in
facts,
along
with
stories
to
make
the
rum
tasting
entertaining.
After
the
rum
tasting
our
food
was
finished
and
we
were
treated
with
a
whole
table
full
of
delicious
food
on
the
patio
—
Sweet
Potato
Soup
with
Rum,
Rum
and
Brown
Sugar
Chicken
Thighs
with
Onion
Jam,
Red
Beans
and
Rice,
Rainbow
Garden
Salad,
Iana’s
Pumpkin
Fritters…and
of
course,
Nicole’s
Butter
Rum
Cake!
My
mouth
is
watering
for
all
of
these
again
as
I
type
this.
We
would
highly
recommend
this
to
anyone,
but
particularly
to
those
who
enjoy
cooking
and
want
to
enjoy
an
experience
unique
to
the
island
of
Antigua.
