Very interesting cuisine--sort of hotdish meets pizza colliding with Mac n cheese all combined in brick fired culinary delight. Fairly large portion, one order is almost enough for two people for around $15.

Just stopped at Let me Cheese U and asked Judson if he'd would make me a Keto Pizza Bowl and he did, it was amazing. Definitely recommend one if doing low carb or Keto.

This place is amazing! If you are gluten free or have celiac disease, this is the safest place in town to eat. The owner (I'm sad to say I didn't catch his name), trains his employees to wear gloves between each meal. All ingredients are separated and covered and use separate utensils and gloves. He uses gluten free items, such as Gouda cheese, corn tortillas and he makes his own gluten free pasta. Wonderful guy, down to Earth and so careful with everything gluten free. The food was amazing. You will not be disappointed!

so good. have been waiting a long time to try this place and i’m so happy i finally did! so cheesy! the people who work here are super super nice. there’s also outside seating if you want to eat outside. i highly recommend this place if your a huge mac and cheese lover. 100/10 easy.

If you are in Red Wing and want something that sounds traditional but made much more fun, this is your spot. Pizza is tasty, mac is fantastic, but the best bit is that the folks that run this place. I have some dietary needs and I have never been to a restaurant that was so accomodating and friendly, that isn't usually the case when eatting and you have to eat differently.

We stopped in to checkout the Mac and cheese but we were pleasantly surprised to find out that they had much more. Pizza, gyros and street tacos. The place was a quaint little restaurant but the food packed a big punch! The customer service was amazing too.

Decided to stop here for dinner on a one day trip to Red Wing. Food was SO GOOD with so many unique options. Service was really great too. Would definitely recommend.

I ordered the lobster Mac and cheese, and the Southwest chicken salad. Before I go into more detail, I will give a quick summary. It's delicious, and the price is right. As an ameteur chef, there is alot right going on here that I noticed. Extremely fresh ingredients, but if you don't like your food spiced up much, just make sure you mention it if you aren't familiar with some of the dishes. The salad is actually made properly, each ingredient separated out so your salad texture doesn't get ruined. Portions are good. Definitely better than the subway next door.

The owner of the restaurant is a smoked foods chef, he did an excellent job with the meats that we tried. We got smoked brisket and chicken, they were both amazing. He was a friendly guy and passionate about smoking meat. I strongly recommend trying it. It was fast and convenient! I will go back.

Pizza is a 6.8 out 10. Sauce was acidic tasted watery. Pepperoni was not crispy similar to Little ceaser. Classic Mac and cheese was not good. There was no flavor on noodle or cheese sauce. Prefer noodles and company over this. Place was nice, clean and helpful staff !

Came here for a late night snack after a wedding at the St. James and it was amaaaaazing! 10/10 recommend. Owned by a very sweet couple that was so welcoming. The guy told us he smokes all of the meats in house too. Next time you're in Red Wing, you have to stop in! Really good food. Quick service too.

I was looking at the area for restaurants and the initial “profile” through Google maps looked quite promising. After speaking to a friend who had been to this establishment a few times it was suggested, but I was told how there was some rebranding since we’ve been there. I showed up with one other adult and one young teenager. We had the tacos and a pizza. I feel the pizza was great, however my tacos not so much. The flavoring was great but uneven and much too juicy. I know that pull pork should be tender but this was almost a soupy consistency. I also felt the pricing on Google not being updated on the site and only marked off in person was a bit of a deterrent after already walking in and feeling like we were already going to make a purchase. The change from 19 to 23 wasn’t a small difference. I wish that was reflected before we got to the establishment in person. The lady at the counter was great though. Which bright this from a 2 to 3 overall. I’d love to see the price change and perhaps a little less soup and hope to see a better restaurant in the future.

There is mac and cheese, then there is Mac Shack mac and cheese. First off, they don't just sell mac and cheese. They sell pizza, wings gyros, and sandwiches. They also have a plant based menu with items that are gluten free, as well as keto friendly. We couldn't decide which mac and cheese to try, so we asked the employee for his recommendations. We went with his two favorites. (The cubano and southwest mac and cheese) I ordered a side of tots because I thought the portions would be small. I was wrong. We could have shared an order because neither one of us were able to finish half of our lunch, and we barely touched the tots. Both of us loved our entrees, and wish we had a place like this in our neck of the woods.

The food was amazing! We ordered one meal of BLT chicken Wrap with his home made kettle chips! The one meal was big enough for the both of us and was very affordable! Over all meal for two was $20 even. 10/10 would eat again! Very delicious food and kind owner and customers❤️

Wish I’d taken a pic before I dove in!! I ordered the plant based Southwest option and it was creamy and delicious -perfect for a rainy night. My husband got the buffalo chicken Mac and his was quite the treat too. The young man behind the counter knew the menu like a true professional- very helpful and an overall pleasant experience. Will make a point of going back to Red Wing just for the mac!

The service and food at The Mac Shack ^ Specialties was good. I ordered the chicken bacon ranch mac and cheese with a couple of changes. They let me remove or change the ingredients easily so I could love my meal. I do think $18 for a bowl of mac and cheese how ever good is expensive.

I went here with my very picky teenager. It was easy ordering, taking out ingredients is quick, and optional, and the food was a HUGE hit. Best food in a while. As a chef, this will be a continuous stop for me now.

The service was super friendly, and the food was delicious and creative. Packed with a good combination of flavor and texture. I got the chicken bacon ranch wrap, husband got the Cuban, kids got a pizza, and lamb Gyros. Everyone was happy with their meals. Definitely will go again to try the street tacos an macaroni !

Stopped here while visiting the town and this place is great. We got the smack n Mac and Cheese burrito both and it was so uniquely delicious! The food was freshly made and very fast. The drink selection was a nice variety. The cheese was wonderfully cheesy. The employee working was the owner and wondefully friendly and honest. I would highly recommend and look forward to coming again.

This is my second visit, and I'm so glad I got to eat here again! First, the name. 😂 I love the name of this place! How cute is it?? Love it so much. Second, they have ALL KINDS OF WAYS TO HAVE MACARONI AND CHEESE! Like any way that you can think of having mac and cheese customized, I swear they got it. There's other delicious menu items, too, like street tacos and gyros and wings, but I feel the macaroni options are where they truly shine. The owner also works in the store, and he is so sweet and friendly! I cannot express how much I enjoy this restaurant and will recommend it to everyone and anyone in the Red Wing area. 🙌

TLDR: If you see this and are hungry now just go here already. It's fast and awesome! Usually you have to choose between quality, or convenience but his place has both. They put real effort into making delicious fresh and flavorful food. Lots of variety from mild to wild. Fast friendly service. We got the southwest Mac and Cheese and big Greek wrap. Both were loaded with meat and fresh veggies. The smoked meats in the southwest Mac had just the right amount of smoke flavor to them and the fresh jalapenos really made it pop! They don't skimp on the finer ingredients.

We came down to Red Wing to hike and stopped at Let Me Cheese You for supper on a whim. I was super impressed with how friendly and courteous the staff were. We went out to eat on the patio, and when our food was delivered they recognized my daughter didn’t get her chips with her kids meal and brought a bag out to her. The food was delicious! I had the Cuban mac n cheese and could not believe how good it was. I’ll definitely be back.

Woodfire pizza!! Truly impressed. They smoke their own meat too. Medium pizza was more than the two of us can eat and already looking forward to the leftovers. Added a photo of the Barbarian - if you love meat this is THE ONE!
