I
made
my
way
through
the
streets
of
Santo
Domingo,
I
couldn't
help
but
feel
a
sense
of
anticipation.
I
was
on
my
way
to
Laurel,
a
restaurant
that
had
been
recommended
to
me
as
one
of
the
best
places
in
the
city
to
experience
modern,
innovative
cuisine.
As
I
entered
the
restaurant,
I
was
struck
by
the
sleek,
modern
decor.
The
walls
were
adorned
with
contemporary
art,
and
the
lighting
was
dim
and
atmospheric.
It
was
clear
that
Laurel
was
a
place
that
took
both
food
and
ambiance
seriously.
I
perused
the
menu,
which
offered
a
range
of
inventive
dishes
that
blended
traditional
Dominican
ingredients
with
international
techniques.
I
decided
to
start
with
the
ceviche,
which
was
made
with
local
sea
bass
and
served
with
a
yuzu
and
ginger
dressing.
The
ceviche
arrived
at
my
table,
and
I
was
immediately
struck
by
the
bright,
fresh
flavors.
The
sea
bass
was
tender

delicate,

with
me.
They
were
happy
to
explain

dish
in
detail,
sharing
their
knowledge
and
enthusiasm
with
a
genuine
love
for
their
craft.
As
I
left
Laurel,
I
felt
grateful
for
the
opportunity
to
experience
such
incredible
food
in
such
a
beautiful
and
welcoming
environment.
Laurel
is
truly
a
gem
in
the
heart
of
Santo
Domingo,
and
I
would
highly
recommend
it
to
anyone
looking
for
a
unique
and
unforgettable
dining
experience.
