I
went
to
Revo
twice
last
year.
It
was
perfect:
friendly
staff,
good
service,
nice
wine,
well-executed
dishes.
Yesterday
was
a
disappointing
experience.
The
hostess
sat
us
down,
but
no
one
approached
us.
The
place
was
not
full.
Previously
staff
came
quickly
and
brought
some
tap
water.
We
had
to
ask
for
it.
There
were
water
bottles
on
the
tables
beside
us,
so
we
wondered
why
they
did
not
bring
us
some.
As
we
ordered,
we
requested
to
try
the
white
wine
by
the
glass.
Based
on
what
I
had
in
my
last
visit
and
considering
the
price
you
pay,
I
was
expecting
something
much
better.
Despite
the
fact
that
we
were
disappointed
with
the
wine,
we
were
not
comfortable
with
the
service.
We
took
extra
minutes
to
decide
on
drinks.
And
here
starts
another
problem,
the
food
came
before
the
drinks.
It
was
probably
ordered
before
we
tasted
the
wine.
When
you
go
out
for
brunch
you
are
relaxed,
you
want
to
enjoy
it.
An
appropriate
kind
of
service
waits
until
the
client
decides
on
the
drinks
and
after
that,
sends
the
order
to
the
kitchen.
I
was
not
in
a
hurry,
the
place
was
not
full,
so
why
rush
the
service
to
this
point?
I
get
my
eggs
benedict,
both
eggs
and
hollandaise
sauce
were
cold.
The
waiter
explained
they
serve
it
that
way
because
of
the
avocado!
What?!?
That
was
a
first!
Cold
eggs
benedict!
I
was
informed
the
chef
could
prepare
another
one,
but
they
were
afraid
I
would
not
like
it.
I
was
recommended
to
choose
another
dish
to
avoid
wasting
more
food.
To
make
it
clear:
-
I
do
not
like
to
waste
food
and
I
only
send
back
a
dish
when
it
is
not
properly
done,
which
was
the
case.
It
was
unpleasant
to
be
put
in
this
position.
-
Eggs
benedict
is
not
a
cold
dish.
The
bread
is
toasted,
eggs
come
out
of
the
water
hot,
the
sauce
is
warm.
After
a
hollandaise
is
prepared
it
is
generally
keep
it
in
bain-marie
around
49
to
63C
until
it
is
served.
If
it
was
kept
in
the
fridge,
you
can
heat
it
in
bain-marie
making
sure
it
gets
to
the
table
at
the
correct
temperature.
So
even
if
you
use
a
cold
ingredient
like
avocado
instead
of
bacon
or
ham,
it
should
still
get
to
the
table
warm.
That
is
how
it
is
done
anywhere
in
the
world,
except
at
Revo.
I
tried
to
suppress
the
explanation
about
the
eggs
and
choose
another
dish.
But
the
waiter
did
not
bother
to
come
and
pick
up
my
order.
I
called
the
manager.
She
was
polite,
but
I
heard
the
same
explanation
about
the
eggs.
When
I
mentioned
the
service
issue,
I
was
informed
that
they
do
not
bring
the
tap
water
anymore
unless
you
ask
for
it.
That
is
because
they
were
having
loss
in
the
drinking
part
since
people
sat
there
and
consumed
nothing
but
water.
The
manager
emphasized
they
still
offered
it
when
requested,
meaning
"we
are
still
fair
to
the
clients".
Basically,
if
you
have
been
there
already
you
know
you
can
ask
for
water.
What
if
you
do
not
know?
Will
the
staff
inform
you?
Before
someone
answers
me
saying
I
do
not
understand
Revo's
side
(I
read
other
reviews),
I
do
know
the
restaurant
and
hospitality
world,
how
revenue
management
works,
and
how
hard
it
is
to
keep
a
business
open.
It
would
be
much
more
appropriate
to
inform
each
client
that
the
restaurant
serves
just
1
bottle
of
water
complimentary
per
table.
It
is
also
a
good
idea
to
inform
the
eggs
benedict
are
served
cold.
The
manager
told
me
to
order
something
else
and
explained
it
would
not
be
charged,
but
everything
was
so
unpleasant
I
simply
lost
the
appetite.
My
friend
was
almost
done
when
the
idea
was
eating
together.
Besides
if
a
chef
believes
it
is
correct
to
serve
a
dish
that
way,
I
just
do
not
know
what
to
expect
from
the
rest
of
the
menu.
I
believe
Revo
does
some
good
things,
like
cocktails
and
bakery.
It
is
the
kind
of
attitude
that
bothers
me
and
makes
me
believe
it
is
not
worth
returning.
I
left
and
went
straight
to
a
bar
that
has
been
in
business
since
1966.
It
is
not
fancy
or
sophisticated,
but
their
"bolinhos
de
bacalhau"
and
"pasteis"
come
always
hot
and
have
kept
the
same
quality
throughout
the
years.
There
at
least
I
know
exactly
what
I
am
getting
and
the
waiter
is
always
attentive
no
matter
how
many
people
are
on
tables.
