experience
that
truly
surprised
us.
We
have
a
habit
of
frequently
visiting
restaurants
featured
in
the
Michelin
guide
across
various
countries.
This
establishment
marks
our
fourth
encounter
with
a
three
Michelin-starred
restaurant
and
the
best
in
Singapore.
Compared
to
others
of
its
caliber,
this
one
undoubtedly
earns
a
perfect
rating
of
5
points.
The
restaurant
excels
in
utilizing
innovative
techniques,
cooking
with
premium
ingredients,
presenting
dishes
beautifully,
and,
most
importantly,
orchestrating
well-balanced
flavor
combinations.
Our
dinner
commenced
with
a
delightful
starter—a
small
truffle
and
mushroom
tartlet
accompanied
by
the
savory
notes
of
crispy
fried
onions
and
bacon.
The
harmonious
blend
of
flavors,
nestled
within
a
crisp
filo
pastry
for
added
texture,
set
a
promising
tone
for
the
evening.
The
first
main
appetizer
featured
on
the
menu
was
an
exquisite
combination
of
cauliflower
mousse
layered
with
caviar
and
langoustine
jelly.
The
dominant
black
caviar
was
complemented
by
the
creamy,
smooth
mousse,
resulting
in
a
refined
and
luxurious
taste
experience.
The
following
course
of
crab
and
a
generous
serving
of
black
caviar
showcased
delicate
sea
flavors.
The
light
and
unobtrusive
taste
was
enhanced
by
a
lobster
head
sauce
that
provided
a
subtle
iodine
impactful
twist
to
the
dish.
Moving
on
to
the
scallop
dish,
it
presented
the
most
delectable
scallop
I
have
ever
tasted—remarkably
tender,
perfectly
textured,
with
a
subtly
sweet
creamy
essence
that,
paired
with
the
accompanying
sauce,
was
simply
divine.
Before
the
main
course
arrived,
we
savored
two
additional
appetizers—one
featuring
cheese
mousse
and
the
other
showcasing
carrots.
While
these
may
seem
like
straightforward
dishes,
their
complex
preparation
elevated
them
to
a
symphony
of
explosive
flavors,
expertly
executed
to
perfection.
For
the
main
course,
we
were
served
beef
Wague
as
a
substitute
for
the
usual
duck
on
the
menu.
Opting
for
the
Australian
Wagyu
tenderloin
was
an
exceptional
choice;
the
steak
was
incredibly
tender,
boasting
a
rich
meaty
flavor
with
juicy,
slightly
sweet
undertones—a
flawless
dish
impossible
to
surpass.
Prior
to
dessert,
we
were
treated
to
a
melted
truffle
cheese,
perfectly
paired
with
a
dessert
wine,
presenting
a
delicate,
luscious
texture
that
was
warm
and
creamy.
The
desserts
served
as
a
sublime
finale
to
our
opulent
dinner.
The
chocolate
mousse
cake,
featuring
rich
chocolate
and
caramel,
dazzled
with
its
vibrant
flavors
—a
testament
to
the
pastry
chef's
skill.
Our
dining
experience
culminated
with
the
Clementine
dessert
in
assorted
textures—a
true
standout
with
its
refreshing,
cold,
and
juicy
elements,
devoid
of
excessive
sweetness,
allowing
each
flavor
to
shine
harmoniously.
Bravo!
This
restaurant
left
us
without
a
single
complaint,
warranting
its
three
Michelin
stars
and
the
considerable
sum
we
spent—exceeding
$1,000
for
the
two
of
us.
With
a
splendid
interior,
impeccable
service,
expertly
curated
wine
selection,
and
top-tier
cuisine,
it
undoubtedly
deserves
top
marks.
