We
namen
het
aperitief
op
het
terras,
een
Sauvignon
Blanc
die
verder
niet
werd
toegelicht
en
in
het
glas
op
tafel
kwam.
Ernaast
een
amuse
tweeluik.
Een
“spring
roll”
met
vulling
van
zalm
waarbij
pinda
en
een
heerlijk
sausje
met
Aziatische
toets,
verrassende
smaken,
wow.
En
een
krokantje
met
crème

kippenlever

met
gemalen
parmezaan,
lekker.
In
een
zwart
schaaltje
een
rolletje
tartaar

Holstein
rund,

Het
dessert
was
geïnspireerd
op
de
Schwarzwälder
kersentaart
en
gepresenteerd
door
de
chef
zelf.
In
een
dunne
cilinder
van
melkchocolade
geslagen
room
met
verse
kersen
waarin
stuken
kletskop,
ernaast
een
quenelle
sorbetijs
van
kers
op
een
crunch,
aan
tafel
afgewerkt
met
een
saus
van
kriekenbier.
Mooie
smaken
die
aan
de
taart
deed
denken
maar
voor
mij
veel
lekkerder
waren.
De
wijn
was
hiernaast
keurig
in
balans.

Bediening
was
uitstekend
verzorgd
door
een
grote
brigade,
zeer
correct
en
ietsje
formeel.
Ondanks
dat
het
bijna
helemaal
vol
zat
liep
alles
gesmeerd
en
werd
er
niks
over
het
hoofd
gezien.
Samengevat
kunnen
we
stellen
dat
deze
beleving
de
toch
al
serieuze
verwachting
overtrof.
Verfijnde
gerechten,
top
bereidingen,
prima
texturen
en
originaliteit
waarnaast
keurig
geselecteerde
wijnen,
alle
ingrediënten
die
nodig
zijn
om
onze
middag
tot
een
succes
te
maken.
