CONS: 14 EUR for filtered water. Really?!? This should be illegal. Guillaume is pouring filtered tap water, placing them in their own branded bottles and then serving them on your table for 7 EUR each. Note that the price isn't on the menu, so it's a "surprise" when you get the bill. I really don't care if other restaurants are scamming diners with this same trick, Guillaume should be better than that and they're not. If we're spending 200 EUR to dine, don't be petty and try to skim another 14 EUR by charging for tap water. PROS: The food was pretty good.

Every dish was amazing! A lot of complex flavours that worked really well together! If I'm every back in Brugge I'll be sure to visit again.

This restaurant is a fine dining style, higher class but not super expensive surprisingly. We ate here as a couple and were instantly welcomed in and seated. The ambience is nice and there are maybe 30 covers, but it is not at all cramped. We tried the 7 course crazy dining experience. This was a delicious medley of small starters, the smoked mackerel piece really stood out. Each course was well presented and I loved the sea bass, the lobster course and the sliced meats. We took a Wine pairing with our meals and we were not disappointed, it was an extra €33 each yet we had plenty and were taken all over the winerverse. Our waiters were friendly and knowledgeable and we would definitely eat here again.

Absolutely spectacular experience at Guillaume! We chose to enjoy all 6 dishes and we’re so happy we did. Each was more inventive, beautiful and delicious than the last. Be prepared for an extended dinner - over 3 hours for us. We highly recommend - very special place!

We made a reservation to have a special family dinner here for American Thanksgiving. Because it was a rainy Thursday in late-November, we were the only diners that night. Nonetheless, Laura and the staff at Guillaume took great care of us, allowing us to have an intimate, slow, expertly prepared and plated meal, start to finish. We ordered the 5-course chefs game menu, which included wild boar, hare, venison, bison, pheasant and partridge. The wine pairings were truly spot on and the desert was a masterpiece. It was the absolute highlight of our family trip to Brugge.

Everything was perfect . We tasted the 5course menu (crazy creations) with wine pairing plus we shared one extra course of the menu « à la carte ». Every course had something special . We had a really pleasant time. I fully recommend it!

Nice food and good portions too which is nice to see for a change. We tried the seafood oriented set menu which was fairly good. Good combination of flavours in well presented plates. Highly recommend the Galbert beer, a locally brewed gem - the best I have ever tried.
