myself
here
when
Air
Vanuatu
cancelled
our
flight
to
Tanna
at
the
last
minute.
We
needed
somewhere
to
stay
throughout
the
four
night
delay,
and
this
restaurant
was
at
the
resort.
What
a
fortuitous
thing
that
was!
I
was
chuffed
to
eat
simboro
(2950VT)
after
watching
Robert
Oliver
speak
of
it
so
reverently
on
Pacific
Island
Food
Revolution
this
season.
So
great
to
see
Ni-Vanuatu
food
on
restaurant
menus,
and
this
dish,
which
is
available
in
chicken
or
fish
(poulet),
definitely
delivered
half-quarter-quarter.
I
also
enjoyed
poulet
ceviche,
and
a
dessert
of
cooked
plantain
stuffed
with
freshly
grated
coconut.
As
I
was
so
impressed
by
the
simboro,
I
went
back
solo
to
try
another
dish:
a
seafood
salade
niçoise
(2950VT).
Again
it
made
the
most
of
island
produce,
like
excellent
snake
beans,
tomatoes
and
watercress,
teaming
them
with
wedges
of
boiled
potato,
salad
greens,
black
olives,
boiled
eggs
and
strands
of
sweet
red
onions.
The
seafood
component
sat
on
vibrant
beetroot
purée:
two
generous
pieces
of
pan-seared
poulet,
two
king
prawns
and
two
tenderly
handled
scallops.
Breakfast
has
also
been
well
executed
and
interesting
across
two
mornings
so
far.
Also
love
the
charming
staff,
and
Ginger,
the
delicately
proportioned
restaurant
cat.
