I
ate
at
the
first
restaurant
and
was
so
disappointed
that
I
suddenly
went
to
this
restaurant,
which
was
my
second
choice.
The
store
has
a
spacious
kitchen
that
looks
like
a
renovated
old
folk
house.
The
large
pot
and
charcoal
grill
stand
are
eye-catching.
・Salt-grilled
swordfish
(second
time
today
lol)
・Mackerel
scratches
・Single
grilled
matsutake
mushroom
from
Nagano
・Blanched
natural
puffer
pig
skin
・Echizen
grated
soba
And
we
had
draft
beer.
(*My
memory
of
the
menu
name
is
vague
lol)
By
the
way,
the
draft
beer
is
Asahi's
Super
Dry.
First,
let's
have
salt-grilled
saury
fish.
delicious!
It's
crispy
on
the
outside
and
moist
on
the
inside,
and
when
you
open
it
with
chopsticks,
the
delicious
flavor
oozes
out.
I
think
it's
probably
Binchotan
charcoal,
but
the
skewered
saury
is
carefully
grilled
over
charcoal
to
just
the
right
degree
of
doneness,
and
the
hidden
knife
in
the
diagonal
lattice
makes
the
texture
even
better.
Masu.
it's
the
best!
Next
is
mackerel
scratches
It
is
lightly
pickled,
giving
it
a
gentle
texture
and
outstanding
flavor.
I
think
they
intentionally
used
mackerel
with
less
fat,
but
it
wasn't
to
my
taste.
Next,
we
will
have
grilled
matsutake
mushrooms.
It’s
delicious!
This
was
also
grilled
whole
on
charcoal
using
a
skewer,
and
served
with
just
the
tip
split
open.
When
you
break
it
up
with
your
hands
and
squeeze
out
the
sudachi,
the
water
overflows
and
fills
your
mouth
with
a
rich
aroma
and
flavor.
This
is
the
first
time
I've
had
matsutake
mushrooms
with
such
a
strong
flavor.
Next,
enjoy
the
parboiled
natural
puffer
pig
skin.
The
light
ponzu
sauce
and
crunchy
texture
give
it
a
nice
feel.
However,
the
flavor
is
weak
and
leaves
me
feeling
a
little
unsatisfied.
I
think
it's
natural
that
each
fish
and
meat
has
individual
differences,
so
this
can't
be
helped.
There
were
many
other
menu
items
I
wanted
to
try,
but
since
it
was
my
second
restaurant,
I
was
full
lol.
To
finish
off
the
meal,
we
had
Echizen
Oroshi
Soba.
The
thin
and
firm
noodles
are
boiled
a
little
hard
and
are
delicious!
Topped
with
green
onions,
grated
daikon
radish,
sea
cucumber
seaweed,
and
freshly
shaved
bonito
flakes.
The
soup
is
of
course
homemade,
and
the
soba
noodles
are
also
handmade.
It
is
completely
comparable
to
the
soba
noodles
at
a
soba
restaurant.
At
the
end,
I
spoke
with
the
general
for
a
bit,
and
he
was
a
very
humble
and
soft-spoken
person.
I
said,
``It's
amazing
that
you're
doing
such
a
thorough
job!
When
I
told
him,
``I'm
just
doing
the
obvious
thing,''
he
said,
and
I
was
really
moved.
I
would
like
to
visit
Fukui
again
with
this
store
as
my
destination.
