After
leaving
the
coffee
capital
of
Melbourne's
Italian
district,
finding
the
Byron
Bay
Canteen
was
a
relief
.
Here
making
coffee
is
an
art
form.
It’s
not
only
that
the
coffee
is
great
but
there
is
also
the
friendly
chat
to
be
had
once
there,
that
is
until
the
milk
starts
heating
followed
by
the
pouring
then
things
quieten
down
as
the
baristas’
meditative
process
of
listening
to
the
milk
heat
begins.
The
milk
is
heated
to
perfection
and
the
froth
produced
is
silky
smooth.
The
quality
of
the
crema
is
a
good
indication
of
the
espresso
and
the
Byron
Bay
Canteen
won’t
disappoint.
Steve
is
a
barista’s
barista,
the
coffee
is
number
one
and
he
treats
the
subject
as
a
science.
There
are
a
small
number
of
treats
such
as
lemon
passion
fruit
curd
on
sour
dough
crumpets
or
locally
made
vegan
wagon
wheels.
Byron
Bay
Canteen
enjoys
the
passing
trade,
however,
if
I
lived
in
Byron
it
would
be
a
daily
destination.
