    UPDATE: Owner DAVE really doesn’t like his business much. See his respond below 👇🏻 This place seriously needs to turn up the ac. Very hot inside and they are serving some spicy green chili. Was dripping sweat 3 bites into my meal. Had to pack up my food and finish my lunch in my car. Was wondering why it was a ghost town inside during lunch on a Friday. And what’s up with the massive price increases. This place will probably change ownership soon.

    Breakfast burrito was great. Sauce was awesome. I got the red and the green on the side because I was undecided. Next time, I'll take either, but probably the green.

    Very dirty place!!! me and the wife love green chili. We heard Carlito's had hatch Green Chile on the menu. So we went for the first time. My wife had green chili relleno. I had the green chili hamburger. Half through the burger there was something sharp in my mouth. I pulled it out and it look like part of a steel spatula. My wife brought it to their attention. To my surprise they did not even apologize. Nothing was said to us. We didn't want to make a big thing about it but of course I will never go back.

    Updating my review. First time to be able to dine inside! Unfortunately all the people from before the virus that worked here are no longer hère. Word from the new people is that the people from before decided that they could make more on unemployment? I was the only one eating and food took around 20 minutes and was cold. Ordered calabasitas and received rice. Food is still good but bugs are going to need to be worked out.

    You must eat here if you like Mexican food. I had the chicken tacos and steak tacos and they were excellent. Lady was so friendly I really enjoyed her customer service. Definitely eating here again

    I'm from Albuquerque, NM and this is some authentic NEW MEXICAN. There is no doubt that Carlitos was born and raised on NM hatch green chile and everything in-between. Please eat here and make sure Nevada keep this restaurant open during the 'pandemic You won't regret ordering anything and everything from here!!!!

    New Mexican food, right here in Henderson. They roast their own hatch chiles (it's something too see!). My favorite things to get are the Chile Relleno burrito and the TAMALES. My husband loves the Navajo taco and the Frito pie. This place is a gem.

    Definitely some of the best food I've ever had in my life and some of the best people work there. Been going there for a very long time! Amazing, authentic tastes and extremely generous portion sizes. Also, sign up for their mailing list! Their holiday specials are on-point (One exception, didn't personally like the St Patty's day food, but just personally) Only reason I am giving 4 stars is because it hasn't returned to its former pre-pandemic glory. The bar, music, and roasting events were much more lively, and now it's basically counter-service... But the quality hasn't diminished at all. I hope they get more staff soon and open up a bit more!

    As close to the New Mexican style cuisine you can get without going back to New Mexico. Dining area needs an update with tables and chairs. Would be cool if owner could get New Mexican style dinning furniture. Or at least comfortable chairs. Windows need to be cleaned. Area around drink machine needs to be mopped with hot water and bleach morning, noon, and night. Drink machine needs to be sprayed and wiped down with alcohol several times a day. Hostess stand needs some attention. Bottom line, we come here for the food.

    I have loved this place for years but the food has changed for the worse. I always get the same thing, a shrimp burritos, always amazing. I dont go that often because for two but burritos and some tacos for my kids its about $50. But yesterday after craving one for awhile we went and right after seeing them know something changed. They are wider, skinnier and flavorless, nothing about it tasted the same. Im so sad but now im over this place after 6 or more going there. The guy that took my order didn't really know what salsa was. 💔

    Went for lunch today, grew up on the New Mexico/Texas border. Was excited to try some “home” food but it had no flavor and did not remind me of New Mexico food. Food portions were solid, presentation was great, price a little expensive. Service, eh.

    I think this is simply the best New Mexican food in Las Vegas, consistently good. I had the sopapilla with Carne avodada smotherd with cheesecand the green chili, just delicious. Top that off with really good chips and Salsa with a really, really good Margherita. If you leave unsastisfied or hungry you have no one to blame but yourself. I eat there regularly even if it's another co-worker picking it up and I will keep going back.

    Food, 4 / 4.5 stars. So tasty, good portions, so good. Drinks are amazing. I really enjoy the cuisine. Service post-covid, **maybe** 2.5 / 3 stars. They've changed how the menu works a bunch of times, currently it's ONLY taped to the counter next to the cashier. But ... That's not ideal for large groups, or children, or people who can't read small fonts. The counter is metal with sharp corners, I can't wrangle toddlers to prevent injury and read simultaneously. And you just have to be standing there in the way the whole time. ... ... No help from the person behind the counter, not even "Do the kids want a drink?" Not even a little friendliness, just ... Staring at me while I try and fail to read over someone's shoulder. No water at the table or cups for it. You have to get up and get your own refill. No waiters. But there's a bartender? Idk not my cup of tea. I just want to relax, that's not relaxing.

    It may be New Mexico chili but it needs to be prepared properly. It did not taste authentic. It would be good if done right but I agree it's a long way from NM and you have to settle for what there is. I had the burrito Xmas style but not sure about how it came out. It was smothered with red and the inside with green. Not what I'm used to. Willing to give it another try, see if it gets better.

    Being from Colorado, I was looking for good Hatch New Mexico green chili and this was the winner. I ode the chips and sampler dips and I loved them all. The green chili was excellence and the red chili was also surprisingly good. I will definitely be back!

    They’re robbing their customers! The portion sizes are so small! The $6 kids meal didn’t suffice my smaller than average toddlers. The $6 Carlitos burrito is no bigger than a Taco Bell burrito supreme for $3, and the quality of ingredients isn’t any better. I spent $60 on 6 kids, I SHOULD be taking home leftovers, but instead I’m empty handed with hungry kids! Everyone knows how cheap rice and beans are, but they’re stingy even with those! And it’s not Mexican owned. The “quest” is yellow they couldn’t tell me who Carlitos is. Owners name is Ben. Mexican pizza was great. But won’t be going back for anything else. Very disappointed as I like to support local.

    We usually stop here to eat when we come to Vegas, this time the food wasn't good. I ordered the huevos rancheros as always. We're from Albuquerque N.M. and usually huevos ranchers come with beans, rice, hashbrowns and eggs. What I has here was eggs, burned potatoes, and bacon. Very disappointed. The floors and table tops were still dirty from the night before, food and trash were on the floors. Might have lost loyal customers, too bad I couldn't share any pictures of the place and burnt food

    My expectations were a spicy, rich sauce with some heat. The steak meat was dry, and the rice was tasteless. It's not a bad place to eat. But for a $20 burrito it sound be better.

    The menu items are all good , but the green chili stew is WOW amazing. This restaurant is too far from my house for me to go as often as I do. The service is always friendly and precise. Don't forget to pick up some roasted green chili for your freezer.

    The smothered burrito with carne and green sauce is sooo good. We also got the large chips and guac. Your meal comes with a sopapia which is really big. You won't leave hungry!

    Calling all New Mexicans living in LV, Food is exceptionally delish. My mom was from Tucumcari, NM and the food here literally brought me to tears, haven’t had a sopapilla since my Momma left us. I’d give it 5 stars, just not a fan of the ordering process and it was completely dead, but I think it is because more people need to stop thinking “Mexican" is the same as New Mexican cuisine. We had stuffed sopapillas, blue corn enchiladas and we did both, the green and red Chile.

    Food is pretty damn good, hatch chilies are even better. pretty cool dudes working there when we went. plenty of tables available, but most of them needed to be bussed. Other than that, we will be back!

    It was a bit empty and run down on the patio. BUT the service and the food was absolutely amazing. Tonight was my first time but my wife has been a few times. We got the shrimp enchiladas, chips sampler, and the chili mac & cheese. There wasn’t a single thing that missed the mark. They also bring you fresh baked sopapilla and honey 🤯 soooo good 😋

    Tonight was our first visit and definitely not the last. Food was bomb! So filling! Husband said it’s the fullest he’s been in a long time. We both ordered the taco plates. Bartender brought me a sample of his green chili margarita. It was really good with a little kick. Great customer service!! Will be returning!

    Looked forward to eating here after reading reviews. Ordered veggie burrito with red and green sauce. After a few bites realized there was no sauce in the burrito. It was so bland -nothing New Mexican about it. Should have spoken up but left it alone. May try again when passing through. Very clean eatery and great service.

    I came here with friends and we had a nice time. They have a great variety of New Mexico dishes and can even buy different New Mexico foods like chili cranberry jelly and chili raspberry jam. If you like southwestern types of food come try this place out!

    A must... We came here and we both were totally impressed... And EXCELLENT green chili .. this has been the only place we have totally loved.. my honey had a breakfast burrito smothered in green chili... And I had the cheese enchiladas... Both of us had to take to go boxes home.. definitely will be back . Also the customer service was awesome... Super nice... Would give more stars if I could...

    Food is authentic New Mexican. I lived in Albuquerque for 3 years and the flavors brought me right back to my time there! Loved the food, but was frustrated by different loud TVs tuned to different channels.

    this place is a huge embarrassment to New Mexican food! sadly we had such a horrible experience. i can tell you right now do not go here and eat. it’s a huge rip off. they serve you small portions and charge you a la carte. they are representing Sadie’s & Vigils & i can tell you right now they are making them look bad!!! Im from New Mexico and New Mexican food is always served with comfort, we got served with a rude hostess/waitress who was named Michelle, she had the worst attitude ever. for 3 of us we paid $93 for small portions of food!!! to top it off the food is canned and not fresh, we got served on aluminum plates and paper cups all for $93!!! Michelle over charged us, especially with the menu saying we have the choice of sides. Yes we left upset and told her how we felt and she just stood there not caring. for her to be standing there she should at least pick up a rag and clean all those dirty tables. one of the most dirtiest restaurants i’ve ever seen. we are never going back here again, what a huge disappointment to New Mexican culture and its food, this place will eventually be shutting down.

    Outside of the actual Sonora Desert, this is as authentic as you can get! I have been enjoying their posole and green Chile stews for five years. My go-to is the smothered pork verde burrito, but I can gobble up the sliders and nachos with gusto as well. The food is always fresh, the staff is always helpful, and my tummy is always satisfied.

    Wow. I had Dave's Combo and each part of the dish was some of the best I had. The tamale was delicious and the chile reno was one of the best I've had. I will definitely be back for some roasted chiles later. This might be my new favorite restaurant.

    Food was sufficient quantity, and delicious. Recommend if you get a burrito, ask for another burrito skin (tortilla) for the bottom, so it does not fall apart when eating with your hands....or eat with a knife and fork! What is the fun in that? Thanks Carilto's, I will be back! Tasty! 👍🌯🌮 I am trying the Navajo taco next time - Indian fry bread, yum!

    I used to work here ,before they moved to the bigger location. I can honestly say.... how is this place getting 1 star reviews? I worked at this place almost 8 years ago and I still crave carlitos! THIS PLACE HAS THE BEST EVERYTHING! Posole, green chile stew, pork Verde, and those breakfast burritos.Dave , I am convinced anyone who left a 1 star review must not have any tastebuds because nothing i have tasted in vegas has even came close to being as good as the new Mexican food I've had at your restaurant!

    Carlito's is the bomb! I always get the blue corn enchiladas (enchiladas de Nuevo Mexico) with Christmas chilis and it is delicious. The green chili dip and tomatillo salsa is also really good. Thanks Carlito's!

    I had a covered pork verde burrito. OMG, it was THE BEST BURRITO I have ever had. It must have weighed almost 2 pounds. It normally would've been 2-3 meals, but it was soooooo good I finished the entire thing in one sitting!!!! AMAZING!!!! Just look at this photo and you'll see how big this thing was.

    I pay $14. for old food... How mad got home hungry and the Tamales where dry with not sauce or cheese. Just can feel the its being a couple day there. Rice just taste like fridge. I will never going back.

    Love this place. Since moving to Fl., wish there was a Carlitos near me. This was one of our Friday places for fajitas, and Sunday for the breakfast burrito when we lived in LV. With hatch chilies used in cooking and sauces, guarantee this place will not disappoint. Tried the hatch mac and cheese - must try if your a mac and cheese person. The fajitas and burritos are very good. They now sell hatch chili dry for chips and nachos. Can't wait to try this.

    Went for a late breakfast . The smothered breakfast burritos will hold you over all day. They were roasting chili's out front today which just adds to the fresh chili experience.

    We are fairly new to Henderson and discovered this place through a news story about how fast they sold out their first truck load of Hatch Chilis! Having gone the Hatch Chili festival a few times I was thrilled to hear there was someone local roasting!! We emailed to reserve a gunny sack from the second truck and the process was smooth as silk! My email order was promptly acknowledged. When the chilis arrived I was called and asked for a pick up time... we arrived, our chilis were roasted, piping hot and in plastic bag, inside the gunny sack which really helps steaming off the skins. The chilis were beautiful! Definitely "Relleno" worthy! I cant wait to try this restaurant when "dining out" is a little safer. Their menu looks amazing! Kudos to the young man working the roasting check out late afternoon on the 19th. Terrific guy!
