We
did
the
chocolate
tour
last
week.
We
went
out
into
the
orchard
and
learned
how
to
select
ripe
cacao
pods.
Our
hostess
was
excellent
although
her
English
is
a
little
limited.
We
had
an
interpreter
so
that
wasn't
a
problem.
Next
we
went
into
a
roasting/tasting
house
and
helped
roast
the
cacao
seeds.
After
removing
the
hulls,
we
took
turns
grinding
the
chocolate
seeds/nibs
into
a
paste.
The
plain
paste
was
amazing
(if
you
like
really
dark
chocolate).
Out
hostess
added
sugar
in
steps
to
taste
the
transformation.
We
also
had
hot
chocolate
and
chocolate
tea
(made
with
the
outer
husks
of
the
seeds).
It's
a
great
place
for
a
tour
and
there
are
camping
opportunities.
If
you're
in
the
area,
I
highly
recommend
it.
