We
have
spent
the
final
evening
of
our
three
week
trip
in
Japan
here,
and
it
has
been
by
far
the
best
meal
of
the
trip
–
where
we
have
been
at
such
Michelin
starred
celebrity
places
like
Kadowaki.
Indeed,
it
has
been
one
of
the
best
meals
in
my
life.
You
can
feel
the
passion
and
attention
to
detail
here
in
everything
that's
being
served
–
it's
more
an
obsession
to
detail
than
a
mere
passion.
From
a
seemingly
simple
salad
or
fish
starter,
everything
is
perfect
without
putting
on
a
show,
just
by
selection
of
the
ingredients
and
meticulous
preparation.
The
multi-dish
Hassun
in
a
wooden
box
is
a
work
of
art
in
itself
and
just
for
a
short
moment,
humor
and
playfulness
show
up
–
but
to
make
sure
this
is
not
event
cooking,
it's
followed
up
by
sashimi
and
then
by
a
humble
looking
soup
that
is
so
concentrated
with
flavor
that
you'd
be
happy
to
have
it
as
the
only
dish
somewhere
else.
Besides
the
food,
there's
a
sake
pairing
that
really
accompanies
the
dishes
perfectly
–
and
whilst
I'm
not
even
a
sake
amateur,
the
pairing
seemed
much
more
in
place
than
anywhere
else
we've
been.
Finally,
but
most
importantly,
Masayuki
Sano
is
a
perfect
host:
Respectful
but
not
strict,
witty
but
not
flamboyant
–
indeed
traits
you
can
find
in
all
of
his
dishes.
If
art
is
the
expression
of
personality
through
a
craft,
this
has
been
the
most
artistic
evening
I
ever
experienced.
