a
authentic
italian
perspective,
so
it
might
come
off
as
a
bit
harsh.
We
went
to
eat
lunch
and
ordered
two
lunch
menus
-
one
with
a
pizza
margeritha
and
one
with
a
pizza
monte
bianco.
The
appetizers
were:
Tomato
based
terrine
with
okra
and
mushrooms
with
a
dash
of
olive
oil,
pumpkin
mousse,
some
algae
salad
and
a
insalata
verde
with
tomatoes
and
sweet
balsamico.
To
bring
it
to
one
point:
The
only
appetizer
that
tasted
somewhat
italian
was
the
algae
salad
-
it
had
a
rich
garlic
and
olive
oil
taste
and
was
a
wonderful
fusion
between
japan
and
italian.
The
other
appetizers
were
just
plain
bland
tasting.
Maybe
add
some
tomato
purée
to
the
terrine,
use
a
stronger
olive
oil
(extra
vergine)
etc?
Next
to
the
pizzas:
The
first
thing
I
really
have
to
compliment
the
chef
is
that
he
really
knows
how
to
make
the
dough.
It‘s
almost
perfect
crispy
and
fluffy
on
the
inside
and
I
loved
every
part
of
that
dough.
Which
let‘s
me
almost
tear
up
too
see
the
whole
rest
getting
slaughtered
by
the
chef:
The
crust
to
filling
ratio
is
almost
50/50
which
is
not
acceptable.
Also
using
standard
pizza
plates
for
a
mini
sized
pizza
is
giving
me
the
impression
that
I
ordered
a
childrens
menu.
Maybe
use
smaller
plates
next
time?
Cause
the
serving
was
good.
Next
to
the
cheese
used
for
the
pizza
-
it
was
nothing
but
bland.
Please
experiment
with
dipping
the
cheese
in
whole
milk
and
let
it
dry
over
the
night
so
it
gets
a
soury
cheese
taste.
A
shame
that
there
is
no
good
japanese
mozarella
to
find
anywhere.
For
the
sugo
pomodoro:
It
needs
a
lot
more
salt,
a
tiny
bit
of
garlic,
tamato
purée,
and
strong
olive
oil
to
improve
it
tenfold.
Why
does
the
chef
make
such
a
great
dough
but
fails
to
make
a
decent
sugo?
As
for
the
cheese
there
are
no
options
here
in
japan
but
the
sugo
can
definitely
be
improved.
The
staff
was
very
nice,
professional,
and
attentive
and
the
interior
design
also
seemed
charming.
I
sincerely
hope
that
if
the
chef
ever
reads
this,
he
can
remember
the
pizza
he
tasted
in
italy
and
try
to
recreate
it.
And
if
he
doesn‘t,
I
hope
he
will
be
more
bold
when
making
pizza
in
his
own
style.
