    I can’t describe it in a way that does justice to chef Jung Eun philosophy on food. She has a passion to share Korean culture with Australia and is doing so in a way that pays homage to imperial dining and her parents. Homemade fermented produces, condiments and sauces feature in every dish, ingredients including her mum’s home made oil makes its way from Korea to Melb. You won’t find the normal k-town restaurant staples here, come for an experience. Menu changes monthly. Note: getting a ticket to this restaurant is extremely coveted, it booked out in the matter of minutes when we got our seating, but don’t let that detract or distract from the story here

    WOW!!! Our best Korean dining experience to date. Chae and Yoora have done an amazing job with making this dining experience one we’ll never forget. Food like no other, the best expression of Korean food we’ve ever had! Thank you so much 🙏

    To put it simply, I had a great Korean dining experience where it felt like my mum was cooking me delicious meals. Only 6 people in total at the restaurant made it very intimate but still felt casual. Was a really cozy and comfortable ambience with the fire going in the background and literally being in someone's kitchen. Chae is always smiling and does everything so effortlessly that you forget you're technically in a restaurant. Loved all the dishes and you could see the over arching theme of clean food combined with fermentation techniques that made everything very organic and tasty. My favourite dishes were the deep fried shitake mushroom stuffed with prawn and the spicy braised mackerel with radish. Two dishes that had immense flavours that left me thoroughly satisfied. The kimchi had a crisp and fresh taste that must be from being homemade and paired well with the meal. I also really enjoyed the little treats she served in-between meals such as the banana makgeolli! We purchased a few bottles of the pear and mandarin kombucha and they were amazingly good. It was a 60 minute drive to get there through mountainous roads in the darkness but if you're lucky enough to win a ballot, I highly recommend you give it a go as it is more than worth it.

    Honoured to have the opportunity to dine at this cosy spot away from the hustle bustle of Melbourne. It was truly a degustation journey focused on fermentation involving both food and drinks. Chae really takes it to the next level with sustainable farming in their own backyard

    SECOND VISIT (Dec23): Was lucky to get a second visit - it was as delicious as the first visit! would come back again and again 💓 FIRST VISIT (Feb23): It was a wonderful experience - every dish and drink were delicious and wholesome! i love that all the kimchi, condiment, sauces and even drinks were homemade, i also loved the attentive service from Chae and Yoora which made us feel so welcomed in their home!

    Owners Chae and Yoora have created an intimate dining experience nestled in the hills of the Dangenong Ranges. The setting is calm, minimalist and warm. Although the food is simple, delicious and conveys the wholesome quality of a home cooked meal. It is evident how much time, preparation, effort and thought has been spent in order to culminate such an experience. Thank you Chae and Yoora for being incredibly welcoming, attentive and humble. It was a truly unique experience!

    Chae x Supernormal Bossam Party $130pp - Chilled Genmaicha, makrut lime & lemon🍵 - Soy roasted pumpkin seeds - Szechuan pickle shiitake & cucumber - Nori cracker, tuna, gochujang - Rare Breed Pork Bo Ssäm🐖 - Geotjeori kimchi, seasoned crunchy radish🌶️🥬 - Sydney rock oysters - Merimbula🦪 - Chinese cabbage, coral lettuce, carrot, cucumber🥒🥬 - Fish sauce with garlic chive, onion, red chilli - Ssamjang, Chae's mother's toasted sesame oil - Makgeolli🍶 - Doenjang soup🍲 - Makguksu🍜 - Pat Bingsu 🍧 What an extraordinary experience to enjoy the collaboration between Chae and Supernormal. I finally understood the hype of Chae. They were hearty, homey and delicious. I eat Korean food all the time but her kimchi, bossam, ssamjang and sauces were so unique. Those were the homemade flavours you can’t get from normal stores. I kept refilling the kimchi and radish because they were too moreish. My other favourite was the buckwheat noodles. I only complain is they gave too little 🤣 The meal was clean, solid and well executed. However 130pp is slightly on the pricey end imo.

    Brilliant model for intimate dining experience. Excellent refined flavours, a lot of produce and ingredients grown on site. Very affordable for the experience. There is no wonder that they had to change to ballot bookings. Good luck to everyone getting another seating!

    @chae_melbourne, a charming restaurant nestled in the Dandenong Mountains, takes you on a traditional Korean culinary journey enriched by the art of fermentation. Chef Chae and her husband, Yoora, welcome an intimate 6 guests per sitting into their lovely home, where they also grow and ferment their ingredients. Everything about the experience is so wholesome, from the warm welcome to the personalised handwritten note, and the healthy and organic home-cooked concept of the tasting menu. The September-October menu, priced at $110 per person, included 6 courses with paired drinks - such good value! I loved all of the food pairings and homemade drinks, but my favorite dish of them all was snapper with beef, w/ shiitake mushroom stuffing - a unique combination that worked exceptionally well together. The main course consisted of simple multi-grain rice, maesaengi (seaweed) soup, and a variety of Korean banchan dishes: cucumber, chrysanthemum greens, cabbage, and kimchi. (See my reel for the full menu) After the meal, we took a sneak peek at Chae's backyard, where all the magic is created, and purchased some of Chae's kimchi and radish, which I'm still enjoying with my meals today. To secure a booking, they have a monthly ballot system that is drawn live on Instagram, adding an exclusive and exciting touch to this hidden gem. 5/5 ✨ Whilst the food is simple, it's simply delicious and conveys the wholesome quality of a home-cooked meal.     Firstly, I felt blessed to be selected (from many!) in the reservation draw, and then have the opportunity to go for Xmas eve lunch was perfect timing. Set amongst the beautiful Cockatoo scenery, the atmosphere is friendly and relaxed. Yet there is also anticipation to try the delicate, refined and uniquely fermented Korean meals and drinks … Even the palate cleanser was a work of art. Thank you again!
