    AUNTY PEG'S – A ONE-ON-ONE COFFEE DISCOVERY EXPERIENCE Nolan Hirte, Director of Proud Mary Coffee Roasters envisioned Aunty Peg’s to be a welcoming, inclusive space where you could access some of the best coffee on the planet, brewed for you by your one-on-one barista. Right after entering the roastery and café bar, I have been “warned” that Aunty Peg’s is only serving black coffee. In addition, the friendly barista also informed me, that for the entire month of March, only BURUNDI is on the menu. In Burundi, coffee is mainly grown by smallholder farmers. The country exports about 200’000 bags of coffee, which is harvested from April to July, so it is the right time to enjoy the fresh crop now in Australia. To fully immerse into a true sensory experience, I went for two coffee flights, the espresso, and the cold drip flight. Both were made with three different coffees from three different processing stations, but all Red Bourbon varieties. Let’s start with the three espressos: NYAGASHINA (washed): medium acidity (sour), medium sweetness, and medium bitterness. Edamame (green), brown sugar sweetness, medium round body, sweet brown sugar almond finish, with citrus notes, grapefruit and black tea bitterness. RUGAZY (honey): medium acidity, high sweetness, low to medium bitterness. Apricot, brown sugar, caramel like and orange. Velvety mouthfeel, syrupy, dense, sweet, bold finish. KIRASA (natural): intense fermentation aroma. High sweetness, well integrated low to medium acidity, low to medium bitterness. Ripe strawberries with dark chocolate. Dark stone fruits and berries fruit punch, a little boozy. Bold body, thick oily texture, intense high sweetness finish. The cold drip flight was another amazing experience, and I especially liked the preparation and the final presentation. The three coffees arrived in three little glass flasks, and you could pour them over a beautiful big, round, and transparent ice cube. The visual effect was very nice, and the cold brews all had a very full body, with intensified flavors. Thank you for this great experience. A great way to embark on a sensory journey to Burundi. I cannot wait for April to explore their next origin country. And again: it is great to see what high-end quality smallholder farmers can produce.

    "Speciality coffee" is right. They treat coffee like it's THE MOST SPECIAL thing and it shows. No real food to speak of, no milks, no sugar - just an rewarding and deep experience with coffee.

    The place is pretty big and is partially a store and a bar where you can drink black coffee in all its forms. The lady came from behind the counter to ask if she could help me when I was browsing the display of coffee gear. You can see the roasting machines in the background which is cool. I eventually chose an espresso with the Pink Bourbon bean, which was a very sweet, but a nice experience! Prices are high, but I assume that’s because of the selection of beans. If you like black coffee in espresso or pourover, this is a great place to visit. I should visit Core Roasters to make a good comparison.

    Had a wonderful experience at Aunty Peg's. New to specialty coffee, but James made the experience worthwhile. Coffee was great, really enjoyed their selection of deluxe pourovers. Their cold drip is also something special too - definitely a surprise. The tour of the roasting and storage area was also very cool and informative. If you're open to trying some special coffee and aren't weirded out by how eccentric the specialty coffee scene is, definitely stop by here. Managed to leave with a bag of beans in hand and a wealth of knowledge. Well worth the trip.

    Hundred out of ten specialty coffee place! The selection of their coffee bean is always an adventure. The staff are very knowledgable and insightful! Always have a pleasant experience here. Their cup of coffee is, put simply: a gift to my life.

    Like a lab for coffee where they grind their beans at the back of the place. A big bar that serves up to over 10 people at the same time. Also has a small shop corner upon entering. Baristas are knowledgeable and welcoming most of the time. Tried the cold drip #3 which was very pleasant but gets too light after the ice started to melt. Will check out the hot ones next time.

    It's absolutely awesome cafe with roaster!! Also all Barista have a lot of knowledge about coffee. Just focus on black coffees which are V60, filter,espresso and cold brew as well. They organize the counter service that you can talk to them and can see how they make it. If you are really passionate about coffee, you should definitely go there and ask to Barista what you want to know. Moreover you can buy some items that related Proud Mary Coffee. Highly recommend!!

    Delightful place! They only serve black coffee so not the spot to come for your daily latte. They have a rotating showcase menu with three coffee options. The farm and process are all explained with a description of the flavour profile then it's just a matter of deciding how you want your coffee. It's a little pricier than an average cafe there are usually options ranging from $5-12. They have a range of blends and single origin beans for sale as well as some home brewing supplies. A great open space that gives you a glimpse at the coffee being roasted on premises. Staff are very pleasant.

    A real delight for true coffee lovers. Great selection of coffee beans to choose from and you pick your preferred brewing method. I love the experience of sitting beside a bar table being served by knowledgeable, friendly and skilled baristas. Brilliant idea to enjoy quality coffee with the way you wanted, with someone who’s skilled enough to make it right every single time. Great place for nice coffee and chat.

    Was thrilled to find such a Gem in Melbourne. If you are into speciality coffee, this is definitely the place to be. Would like to stay longer if we weren't on a tight schedule and had to order as a takeaway. The barista that day was also nice and that she explained they don't do milk based coffee which is good so that anyone who want milk based coffee can head to Proud Mary's (Their other cafe)which is not too far. Looking at how the barista went through her process of doing her pourover and taking time to taste the coffee before serving shows their emphasis on quality. And the cup doesn't disappoint. Will definitely head back down again whenever I am back in Melbourne to do a flight with them!

    The best coffee spot in Melbourne, possibly the world. Their range of specialty coffee is unmatched and baristas are very knowledgeable and eager to chat about coffee. You will probably learn a lot about coffee by coming here! I came to the community cupping event that they have every month and learnt an incredible amount and met loads of great people. Would 100% recommend to any coffee lovers or anyone who wants to learn about coffee.

    Might be some of the best coffee in Melbourne. Very high end coffee shop and roaster specializing in high end beans from around the world. Black coffee only so don’t come here expecting to order a latte or other milk based drink. Highly recommend one of the pour over options, where you can choose from one of the 15-20 different coffee varietals they have available at any given time.

    Amazing place for specialty coffee in Melbourne! Visiting AP is always an adventure - whether it’s discovering a new specialty coffee or something experiential.     Delicious and rare coffee available - heaven for coffee snobs, but with friendly staff~ I tried four kinds of coffee so far: the Panama Geisha, Catuai ASD Natural, the Honduras Geisha ans the Colombia Wush Wush (Anaerobic Natural).     Been here many times but didn’t enjoy my coffee this time. I ordered an interesting beans from their deluxe menu but it tastes very astringent and over extracted. The barista tried it before serving I don’t know why she thinks it’s ok to serve. Although I was very disappointed by the dry and unclean texture and mouthfeel, yet I can tell it’s a very high quality beans and have a good aroma and flavor notes in it. Will just buy their beans and brew at home next time.

    I try and visit this cafe each time I’m in Melbourne. This is where all the coffee beans for Proud Mary are born. There’s a retail space where you can purchase coffee paraphernalia and PMC merchandise. If you’re a coffee enthusiast, like me, come visit, chill out and enjoy some of the best coffee (black) in Melbourne.

    Aunty Peg’s is soo amazing. My partner and I love Proud Mary’s so naturally we had to check this place out and it did not disappoint. Usually we prefer lattes and coffees with milk, but we tried a couple black drip coffees and they were so smooth and delicious. A bonus for us is that they opened a Proud Mary’s in Portland, OR (my hometown) and we will definitely be checking that one out next time we’re back in the States.

    This is a place of pilgrimage. What else is there to say? If you are interested in specialty coffee then drop everything and come to sit at the bar. There is no milk. Only most curious espresso or filter brews. The menu will have at least 10 or more options including competition beans that are impossible to get anywhere else.

    Loved our experience at Aunty Pegs! We came mid week for a mid-morning coffee so it wasn't too busy, the lady serving us was very friendly and attentive. She was also super knowledgeable about the coffee and happy to give us as much information as we wanted. We opted to have pourovers which were so delicious. Highly recommend!

    If you aren’t a ‘Melbourne coffee snob’ when you walk in, odds are you will be converted when you walk out. You can try so many different black coffees, processed and prepared in different ways. They showcase different coffees from different regions with tasting notes similar to wine tasting. The staff are experts and really professional but relaxed. Just don’t ask for a latte, it’s black coffee only! Don’t let that put you off though.. if you think you don’t like black coffee, do yourself a favour and try this.

    This is definitely an experience for true coffee enthusiasts. I came here to learn about beans, origins and to just be more educated on coffee. The staff are genuinely so lovely.     I rate Aunty Pegs, they have some funky coffees and a good retail selection. I've just moved to Collingwood, so it's great to have them around the corner. You can also get some really great hardware; such as grinders and things like that. The staff are always great. A great spot to chill.

    They showcase a new coffee every fortnight. Aunty Peg's functions as sort of a Cellar Door to Proud Mary. Take the "flight" and taste the rainbow. We enjoyed the experience and the coffee so much, we went back the next day. We asked for a tour of their roastery and they were very kind to give us one. There isn't any food but go for the experience of coffee tasting.

    Unequivocally, one of the best coffee temples in Australia. Staff with knowledge right down to the name of the farmer, the roast time to the second, even the location of the coffee tree on the property! Passionate and friendly, whilst being humble and welcoming. Cafe treats are made in-house, beans roasted in the very next room, and plenty of accessories for sale to create your own brews at home.

    The first black coffee only cafe I have visited and this place is awesome! Super chilled and friendly staff, great selections of beans, and the experience of your coffee being made right in front of your eyes. They do offer some desserts to with coffee, however, not really a place to eat your weekend brunch.

    Dropped in to pick up chocolate (from the Smooth Chocolator), ended up buying coffee. Real friendly staff, great space and it's also nice to be able to see the coffee being roasted live. There's something special about buying a bag of coffee that was just roasted, freshly packed and being put in shelves. 0 miles from Roastery to table
