Ups

Downs
I
recently
dined
at
your
establishment,
drawn
in
by
the
allure
of
traditional
Uruguayan
parrillada.
While
certain
aspects
of
my
experience
left
a
positive
impression,
there
were
also
notable
disappointments.
Let
me
begin
with
the
positives:
The
service
was
exemplary,
with
a
friendly
and
attentive
waiter
who
skillfully
handled
a
cooking
mishap,
promptly
replacing
a
wrong
term
cut
with
a
complimentary
one
cooked
to
the
correct
term.
Kudos
for
such
swift
and
courteous
resolution.
The
portion
sizes
were
commendably
generous,
and
the
atmosphere
was
delightful.
Now,
onto
the
culinary
details:
1.
**Serrano
Ham
with
Goat
Cheese,
Olive
Oil,
and
Parmesan:**
A
solid
start,
with
well-served
ham
and
a
pleasing
combination
of
flavors.
2.
**Garcia
Provolone
Cheese:**
While
the
dish
was
tasty,
the
provolone
lacked
the
characteristic
smokiness
expected
from
a
parrilla
preparation.
Nevertheless,
the
fresh
and
crisp
vegetables
added
a
delightful
touch.
3.
**Filleted
Gizzard:**
Unfortunately,
the
sweetbreads
were
overcooked,
resulting
in
a
tough
and
somewhat
dry
texture.
The
traditional
crispy
outside
and
tender
inside
were
amiss,
and
an
extra
dose
of
lemon
helped
but
wasn’t
enough
to
fix
this.
Just
a
correction
to
your
menu,
only
birds
have
“gizzards”
you
should
fix
your
menu
to
say
“sweetbread”
which
is
the
proper
translation
of
“mollejas”.
4.
**Master
Baby
Beef
Premium:**
This
was
the
low
point
of
the
meal.
Despite
the
evident
quality
of
the
beef,
both
the
initial
well-done
cut
(when
medium
was
requested)
and
the
subsequent
replacement,
while
correctly
cooked,
felt
like
a
downgrade
in
terms
of
cut
quality.
It
was
just
not
the
same
cut.
5.
**Arugula
Salad
with
Apple,
Nuts,
and
Goat
Cheese:**
The
salad
showcased
fresh,
crisp
vegetables
with
well-balanced
seasoning.
6.
**Traditional
Dulce
de
Leche
Pancake:**
A
delightful
conclusion
to
the
meal,
these
pancakes
were
a
true
highlight,
boasting
superb
texture
and
flavor.
In
summary,
your
establishment
displayed
exceptional
service,
generous
portions,
and
moments
of
culinary
delight,
particularly
with
the
dulce
de
leche
pancakes.
However,
the
inconsistencies
in
certain
dishes,
especially
the
Master
Baby
Beef,
left
me
with
mixed
feelings.
I
hope
that
the
kitchen
can
refine
its
execution
to
match
the
great
service
and
atmosphere.
