We
have
always
visited
the
old
brewery
irregularly
but
gladly.
When
we
now
on
16.6.
were
there,
we
chose
menu
I
of
the
new
menu
with
saddle
of
veal
as
main
course.
Greetings
from
the
kitchen
and
the
starter
were
very
tasty,
but
when
the
saddle
of
veal
came,
we
looked
(probably
surprised)
at
the
white,
fully
cooked
meat.
The
explanation
for
this
was
immediately
given:
"Because
the
meat
was
cooked
sous
vide
for
40
minutes,
it
looks
so
white.
But
everything
is
fine!"
Um...no,
it's
not!
It's
normal
for
things
to
go
wrong
and,
in
our
opinion,
also
acceptable
if
you
approach
the
whole
thing
correctly:
e.g.
an
apology
or
asking
whether
it's
OK
or
whether
you
want
it
again.
But
wanting
to
take
the
paying
customer
for
a
fool
is
not
possible
at
all.
A
few
minutes
later,
a
male
couple
at
the
next
table
got
the
same
dish,
in
the
same
condition
with
the
same
fairy
tale.
The
lady
who
was
doing
the
service,
who
had
been
quite
friendly
up
to
that
point,
then
asked
if
everything
was
OK
and
we
replied
that
the
meat
was
completely
done
and
that
it
wasn't
due
to
the
preparation
in
the
water
bath
but
to
the
cooking
temperature
being
too
high.
.....Then
the
lady
turned
around,
left,
and
sent
us
a
"Well,
if
you
can
do
it
better"
from
a
few
meters
away........Well
yes,
not
just
us,
that's
what
sous
vide
is
for
Yes,
it
is
known
that
non-cooks
can
also
cook
meat
to
perfection...
Just
NOT
the
time
is
primarily
important,
but
the
water
temperature.......but
it
doesn't
matter,
that's
another
topic.
But
now
we
really
had
a
MIMIMI
mood
and
didn't
want
to
go
any
further.
So,
BEFORE
dessert
ordered
the
bill
and
said
we
didn't
want
dessert.
Our
wish
was
quickly
fulfilled,
the
bill
came,
the
menu
price
in
full
including
the
dessert
that
was
not
received!!!
Thanks.
We
also
paid
everything
according
to
the
bill
and
told
the
lady
that
she
could
tip
the
money
for
the
dessert
we
had
charged
but
didn't
get.
A
smug
"I'll
pass
it
on"
on
her
part
ended
the
evening!
Again,
mistakes
can
and
do
happen.
But
you
still
have
to
maintain
a
certain
professionalism
and
decency.
Unfortunately,
neither
was
available
here.
What
a
pity!
Old
Brewery:
A
JAMAIS!
(Original)
Wir
haben
die
Alte
Brauerei
bisher
immer
unregelmäßig
aber
gerne
besucht.
Als
wir
nun
am
16.6.
dort
waren,
wählten
wir
das
Menü
I
der
neuen
Speisekarte
mit
Kalbsrücken
als
Hauptspeise.
Gruß
aus
der
Küche
und
Vorspeise
waren
sehr
lecker,
doch
als
der
Kalbsrücken
kam,
schauten
wir
(wohl
offensichtlich
überrascht)
auf
weißes,
komplett
durchgegartes
Fleisch.
Die
Erklärung
hierfür
wurde
sofort
geliefert:
"Weil
das
Fleisch
40min
sous
vide
gegart
wurde,
sieht
es
so
weiß
aus.
Es
ist
aber
alles
in
Ordnung!"
Ähm...Nein,
ist
es
nicht!
Das
mal
schief
gehen
kann,
ist
normal
und
unserer
Meinung
nach
auch
akzeptabel,
wenn
man
das
ganze
korrekt
angeht:
z.B.
eine
Entschuldigung
oder
Nachfrage
ob
es
so
OK
ist
oder
eben
ob
man
es
neu
wünscht.
Den
zahlenden
Kunden
aber
für
dumm
verkaufen
wollen,
geht
gar
nicht.
Wenige
Minuten
später
bekam
ein
männliches
Paar
am
Nachbartisch
das
gleiche
Gericht,
in
gleichem
Zustand
mit
dem
gleichen
Märchen.
Die
bis
dahin,
noch
recht
freundliche
Dame,
die
den
Service
machte,
fragte
dann
nach,
ob
alles
OK
sei
und
wir
antworteten
darauf,
dass
das
Fleisch
halt
komplett
durch
ist
und
dass
es
nicht
an
der
Zubereitung
im
Wasserbad
sondern
an
zu
hoher
Gartemperatur
liege......Darauf
drehte
sich
die
Dame
um,
ging,
und
schickte
uns
aus
einigen
Metern
ein
"Na,
wenn
Sie
es
besser
können"
entgegen........Also
ja,
nicht
nur
wir,
dafür
ist
Sous
vide
ja
bekannt,
dass
auch
nicht-Köche
Fleisch
auf
den
Punkt
garen
können...Nur
eben
NICHT
die
Zeit
ist
primär
wichtig
sondern
die
Wassertemperatur.......aber
egal,
ist
ein
anderes
Thema.
Jetzt
hatten
wir
aber
echt
eine
MIMIMI-Stimmung
und
wollten
nicht
mehr.
Also,
VOR
dem
Dessert
die
Rechnung
bestellt
und
mitgeteilt,
dass
wir
kein
Dessert
wünschen.
Unser
Wunsch
wurde
schnell
erfüllt,
Rechnung
kam,
Menüpreis
in
voller
Höhe
incl.,
des
nicht
erhaltenen,
Desserts!!!
Na
Danke.
Wir
bezahlten
auch
alles
gemäß
Rechnung
und
sagten
der
Dame,
das
sie
das
Geld
für
das
berechnete,
aber
nicht
bekommene,
Dessert
in
die
Trinkgeldkasse
geben
kann.
Ein
süffisantes
"Ich
gebe
das
so
weiter"
ihrerseits
beendete
den
Abend!
Nochmal,
Fehler
dürfen
und
können
passieren.
Aber
dennoch
muss
man
eine
gewisse
Professionalität
und
Anstand
bewahren.
Beides
war
hier
leider
nicht
vorhanden.
Sehr
Schade!
