Very nice cafe, good options for vegetarian and vegans. The avacado toast is a delight. Nice coffee too. The staff are super nice. When sitting outside, there is a lovely view of a buzzy street. I visited Bruges twice and had my breakfast at this place both the times. Toilet is clean too. Highly recommended.

After rude service in That’s Toast we went to Balthasar and experienced the opposite. Amazing service in a rustic ambiance. Good toast and waffles.This is the place to be!

The toast of avocado, smoked salmon and eggs is just perfect and a good balance for the sweet bomb of the amazing milk shake!

Great place to have a breakfast waffle and coffee. Service is amazing and very friendly, my go to choice when in Bruges. Not sure why they stick to beans from Costa Coffee, but it's alright, would rather have something less mainstream though, it's my only criticism. Would highly recommend their waffle and home made strawberry jam and eggs on avocado toast. Their home made smoothies are really generous and super tasty as well.

Food was very good and served quickly... the whipped cream topping was particularly good: I'm guessing it was made on-site. Friendly staff. They (the wait staff) recommend that you make a reservation. Clocks, small statuary and curios are sold there as well.

Found this place when I was wandering around the city. Nice and modern interior. The service was very efficient and friendly from the moment I entered. The choice of food is great - there aren't too many different options - making it much easier to make a choice, but you will certainly find something for yourself. I've ordered avocado on toast with a fried egg and a coffee. Fresh, crispy bread with delicious toppings and an amazing dish presentation. Pleasure to eat there! Highly recommend to anyone!

The food was incredibly fresh. The place was so cozy. We had the salmon avocado toast added tomatoes, the side salad and fruit cup was perfect. Plated like a Michelin restaurant. Highly recommend.

Asked our hotel where to have the breakfast in Brugge and Balthasar was recommended. I had to wait a little as I didnt make a reservation before so for the weekend you had better make your reservation. Firstly the menu is limited, you can have either toasts or waffles. One thing at a time principle is logical for this place I guess. I go with avocado toast with egg and find it quite successful. Next time waffle will be tested👍

Stopped here for a cafe and waffles since we wanted to find a place away from the bustling inner city. Lovely service, delicious waffles and great coffee. Our dog even got water in a very fancy ceramic bowl. Definitely worth visiting if you are in the area

Delicious open sandwiches and unmissable waffles, a lovely spot. Went in on a busy Sunday with several people and a child and our waiter was so thoughtful and helpful. Will definitely check it out again next time I'm in Bruges.

A lovely place for breakfast. Great food with vegan options. Amazing waffles with fresh fruit or fresh whipped cream or sweet sauces. The kids loved it and insisted on visiting again the second morning, even tolerating a 40 minute wait to be seated. Serves Costa coffee but their hot chocolate is exactly as you'd expect from Belgium.

Good service, the outdoor seating are nice. They have a really delicious Belgian pancakes but their Avocado Toast has a bitter aftertaste.

Staff was great. Pancakes and coffe were good, but my bowl of yogurt was a glass of yogurt… It was tasty but very little portion, I think they should change the name because you think that you’re ordering a bowl and it is not.

Nice place for brunch, the toasts were delicous and the waffle in the end was as well very good. However, the service could be a bit better since we had to wait a lot to receive the waffle after the toasts (the staff had forgotten to comunicate with the kitchen).

Came to Balthasar for breakfast after booking a table only an hour before on FB Messenger (where they were responsive despite not yet being open!). Delicious waffles, good coffee and a delightful aesthetic.

Delicious food and a great place for brunch! Their staff is friendly and fast. I wish they had more space inside and a better structure for the outside sitting area (blankets or heaters), but overall a good place to eat!

They also served cake with coffee :) we liked it. Breakfast was of average taste. The menu is not diverse, but you can definitely find something to eat. The place is beautiful and spacious. I recommend making a reservation.

Everything was perfect ! The food was amazing (Strawberry waffle and Avocado toasts and fruits smoothies). The service was fast and the waiters are nice :) 100% would recommend and come back.

Good breakfast menu. We enjoyed dhe waffles and avocado toast. However, the pancakes were actually crêpes and the cappuccino had very little coffee in it.
