Having
very
high
standards
for
steak
and
a
history
of
being
disappointed
I
went
to
Butcher's
Table
in
Bern
with
moderate
expectations.
The
concept
of
ordering
at
a
butcher's
counter
is
creative
and
I
liked
it.
However
the
choice
of
meat
was
quite
lackluster
considering
it
was
a
Saturday
night.
The
three
of
us
ordered
3
x
350
g
Rib-eyes.
One
Swiss
handselected,
one
US
Black
Angus
and
one
of
the
Swissmade
Luma
ones.
From
a
visual
inspection
I
was
dissappointed
to
see
that
neither
the
Swiss
or
US
steak
had
significant
marbling...
for
"handpicked"
steaks
I
would
expect
better.
As
a
"dessert"
we
picked
the
5
weeks
dry-aged
old
cow
fillet.
We
ordered
all
Steaks
medium
rare.
As
a
starter
I
tried
the
bone
marrow
shot.
The
bone
marrow
was
delicious,
and
the
shot
was
a
nice
novelty
although
didn't
really
add
anything
flavor
wise
but
would
recommend
trying
it
if
you're
curious.
The
three
Ribeyes
came.
First
thing
I
noticed
was
that
there
was
quite
a
large
band
of
well
done
in-between
which
a
band
of
more
rare
was
sandwiched
(see
photos).
The
Swiss
Ribeye
was
quite
tough
and
taste-wise
it
was
definitely
below
average
and
not
worth
85
CHF.
The
US
Angus
was
my
personal
favorite,
tender,
cooked
decently
to
medium
rare
and
nice
flavourwise,
but
still
quite
pricey
at
101
CHF
for
360
grams.
The
Luma
Ribeye
had
the
characteristic
strong
Luma
flavor,
but
unfortunately
the
meat
itself
was
lackluster
in
texture
and
flavour...
I've
had
the
Luma
fillet
before
and
that
was
definitely
better.
Here
the
pricepoint
was
116
CHF
for
300
gr.
Lastly
the
old
cow
dry-aged
fillet
came.
This
one
was
cooked
nicely
on
the
medium-rare
to
rare
side
with
a
good
crust.
For
a
regular
fillet
this
would
have
been
alright,
the
dry-aged
flavor
did
not
come
out
much
for
a
5
week
dry
aged
steak...
Pricepoint
110
CHF
for
300
gr.
For
actual
dessert
we
had
the
cheesecake
which
was
good
but
not
in
any
way
remarkable.
Overall
we
paid
500
CHF
including
5
drinks
for
a
party
of
3.
The
service
was
generally
good.
But
we
came
for
the
meat
and
at
this
price-point
it
was,
at
best,
average
and
only
1
out
of
4
pieces
could
impress.
Also
since
they
basically
only
offer
meat,
I
would
expect
better
cooking
accuracy.
