With
a
tail
to
snout
philosophy
you
will
find
some
delcious
and
unusual
cuts
of
meat
here
that
are
cooked
with
care
and
skill.
Part
of
my
lunch
menu
(
The
17
Euro
lunch
menu
is
amazing
value
though
I
chose
to
pay
a
supplement
for
the
special
tuna
dish)
was
a
grilled
pigs
ear
served
on
"
smoked"
potatoes
that
really
hit
the
mark.
One
of
the
servers(
lovely
people
who
really
understand
the
menu
)
swears
by
the
snout
with
smoked
eel.
My
main
was
another
unusual
cut
,
a
tuna"
collar"
from
close
to
the
gills
that
really
looked
and
ate
more
like
a
cross
between
a
bone
marrow
and
grilled
pork
chop.
This
is
an
incredibly
rich
piece
of
fish
and
far
different
than
the
usual
tuna
"
steaks"
which
are
slapped
on
the
grill
for
a
few
seconds
and
served
red
raw
in
the
middle,
well
worth
the
extra
supplement.
On
the
whole
I
think
my
favourite
were
the
fried
anchovies
simply
served
with
lemon
and
salt.
I
am
not
a
fan
of
the
canned
variety
but
try
an
anchovy
fresh
out
of
the
water
and
you
have
something
completely
different..
yummy.
I
only
managed
half
the
desert
after
such
heroric
eating
(
my
first
course
was
the
croquette
of
the
day)
so
this
was
a
lot
of
food....
The
wines
are
Valencian
of
the
"
bio"
variety
.
I
generally
dislike
bio
wines
but
I
was
able
to
find
a
couple
that
drank
well
enough
.The
bobal
and
the
white
,
I
dont
remember
the
varietal
,
I
tried
were
ok.
The
grenach
and
the
tempranillo
were
better.
They
are
kind
enough
to
let
you
try
before
you
buy
so
I
waved
off
the
rose
which
I
found
particularly
nasty
in
that
vegetal
bio
sort
of
way.
For
what
it's
worth
to
the
management
,
I
always
think
it's
a
good
idea
to
offer
up
some
traditional
wines
for
those
of
us
who
prefer
them
so
you
might
consider
it.
I
personally
am
not
afraid
of
a
little
sulphite
and
there
are
so
many
really
excellent
Valencian
wines
out
there
that
don't
fit
the
bio
profile
that
would
go
so
well
with
the
food
you
serve.
This
was
a
very
enjoyable
solo
lunch
sitting
at
the
bar
which
is
a
lot
of
fun
if
you
happen
to
be
travelling
alone..
