Was I caught off guard that one side and one meat was over $23 from a food truck? Very much so! But I can’t lie, the price matched the quality. They give you a ton of meat, I had a good amount left over. Very tender and flavorful brisket. The sides were good too. It wasn’t your typical runny mac and cheese, it was roux based and seasoned very well. I would go back and try them again. For 25 dollars per person, I definitely think it’s higher end BBQ that’s actually worth it.

My BF heard about this place from social media and after reading up, we had to go. First off, the meat is so buttery soft that it falls apart with a fork. We both had the brisket and ribs - I'm not sure which we loved more. The mac and cheese is fantastic. It's not that watery flavorless goo that most bbq places have. It's creamy, full of flavor and I loved it with some of the bbq sauce on it. Definitely get the beans! Probably the best I've had up north. The price is well worth it! You'll leave stuffed and might have leftovers if you get the 2 meats/2 sides like we did. Can't wait to work through the menu.

Awesome food! Real deal BBQ and good craft beer on draft. Next time I go I’m gonna get the platter - we went for some of the specials this time.

We visited hindsight bbq on a Saturday night for a family member send off. We had a few questions before ordering to get a clearer understanding of the menu. We ordered, brisket with mashed potatoes and gravy, pork belly with ribs, Mac and cheese, baked beans and cole slaw. An order of smoked sausage, spinach and cheese and a few sodas. Also an order of brisket empanadas. We ordered in front and sat in the back to wait for the food. Everything came on one platter which was not okay for us. One person does not eat pork and has to fish around to pork to try and enjoy the brisket. The empanadas were soggy and the meat didn’t really resemble the brisket in the plate and was very mushy. The coleslaw was a bit bland as well as the mash potatoes which has a sour taste. The smoked meats were good, along with the bbq sauce. I enjoyed the baked beans the most of all the sides. There was ample seating both inside and outside with a wide drink selection. For about $100, three adults and a child has their bellies filled.

My employees brought me here for a going away dinner when I changed locations. I’ve only heard great things so I wanted to try it before leaving the Waterbury area. At one point there was a rotating daily menu, not sure how often it is changed now. It’s a cool concept. There’s seating inside and blew outside. I loved the decor and a lot of the unique signs. Sone of the staff could have been a little friendlier. We went Saturday night so maybe that had something to do with it. The food was awesome. Everything was fresh and made to order. The Brisket Philly Cheesesteak was delicious. Very tender and juicy. It’s a very unique experience at Hindsight. I highly suggest checking out Hindsight if you find yourself in the Waterbury area.

Hindsight BBQ is an unassuming place at first glance but the food is so delicious! You place your order at the counter and they’ll bring the food to your table which is kind of nice sometimes when you don’t want to be bothered by wait staff. They have bottled beverages and there is a full bar. Now to the good stuff, the meat. The sliced pork belly has such a delicious bark and it’s meaty and oh yes, it gets an “O” rating! My eyes rolled back, and my tongue did a happy dance. The brisket is tender and has a delicious bark, and the flavor is just through and through and gets an “O” rating too! Mmm Mmm Mmm!!! I didn’t think the flavors could keep going but it did. The ribs were good, but I just wanted to keep going back to the sliced pork belly, which definitely was the winner for me. It tied with a brisket. Mmm mmm mmm 😋. I also had the mac & cheese which was good and the loaded smashed potatoes. The Texas Twinkie which is a jalapeño filled with cheese and brisket but I couldn’t taste the brisket and the whole thing is beautifully wrapped in bacon. That was fun to try. If you are any version of a low carb diet, this place is for you!! Everything was good. The ambience is rustic, I am not sure how to describe it, but it’s clean and that’s what matters. There is an indoor dining area and a large outdoor dining area. The meat is really delicious and juicy without being overly smoked.

Best barbecue in Connecticut. We even got a tour of the smoker area. Smoked brisket and smoked wings were delicious. Highly recommend Hindsight BBQ. I'm looking forward to coming back and trying the other dishes as well.

Everyone was raving about this bbq place and I would see it all over tiktok but husband and I weren't very impressed with the food to be honest, it was okay. I will say this though, the customer service was great and the restaurant was very clean which is always a plus.
