overdue,
so
forgive
my
lengthyness!
My
first
experience
with
this
establishment🇹🇹
and
Miss
Carol👑
was
Spiritual
and
Divinely
Ordained💫.
(Nothing
"spooky"
just
phenomenal!
It
was
last
summer,
an
evening
with
a
couple
hours
to
kill,
a
starving
belly,
and
1
thought:
(I
want
some
"home-cooked"
food).
Happy
Sandwich
was
an
unexpected
treat,
like
an
oasis
in
the
dessert.
This
is
why
I
say
this
was
long
overdue...
First
of
all,
don't
let
the
name
mislead
you.
Although
this
is
most
definitely
a
HAPPY
place,
its
certainly
not
only
about
sandwiches
any
more.
It
may
be
one
reason
we
may
all
have
been
missing
out
on
the
BEST-EST
Caribbean,
down-home,
"back
to
deh
islands
mon"
experiences
here
in
Allentown
&
the
Lehigh
Valley.
That
and
the
fact
that
we
pro'lly
just
be
flying
past
going
to
where
ever,
thru
the
lower
side
of
7th
Street
(past
the
Statue
&
Walnut
St)
in
Allentown,
PA.
She's
located
on
the
left
hand
side
by
the
vaccuum
store.
What
caught
my
attention
were
the
signs:
Open,
Roti
&
Hallal
Goat!
Anywho,
Miss
Carol
is
the
essence
of
a
true
Caribbean
Queen,
and
her
food
(Trinida-
dian)
is
all
that
&
more!
She
had
my
head
spinning
with
the
selections
&
sides.
We
settled
on
a
delicious🤤
combo
with
some
Roti
&
Curry
Goat,
Rice
n
Peas,
Macaroni
Pie,
Plantains
&
Falafel
Balls.
(I
was
hungry
&
wanted
to
try
a
lil
of
er'ything!😋)
So
although
its
order
at
the
counter,
there's
booth
seating
available.
I
was
treated
to
her
Maubi
(a
taste)
&
her
"Special
Drink",
and
felt
properly
spoiled
as
though
Granny,
Aunty
&
all
the
Ancestors
were
embracing
me
and
feeding
my
soul.🙇🏾♀️
Fast
Forward
to
last
week
when
I
introduced
my
Panamanian🇵🇦
friend
to
the
experience
that
is
Miss
Carol.🙆🏾♀️
Confirmation
is
the
best
form
of
flattery!
David
started
conjuring
memories
of
his
summers
in
Panama,
full
of
escapades
and
his
food
adventures
as
we
enjoyed
the
experience!
We
leisurely
shared
and
swapped
stories
of
home
(🇻🇮
foh
me)
over
our
island
feast.
His
was
the
Chicken
Roti,
mine
the
Stewed
Oxtail,
Rice
&
Peas
with
Plantains
(maduros),
then
the
soft
drinks
to
top
off
the
flavors.
Prepare
to
be
lulled
by
the
music
(we
be
Jammin'
meh
son),
the
atmosphere,
the
decor
and
the
enchanting
Miss
Carol
and
her
gifted
hands
and
tastes
of
home!
Don't
believe
me?
I
understand
because
"yo
had
to
be
dere"!
But
I
do

also
believe
"the

the
pudding".
Regardless,
you
go
taste
and
see
for
yourself,
but
go
early
before
the
food
runs
out.
