Aceto
Balsamico
di
Modena
Tradizionale"
(not
to
be
confused
with
balsamic
vinegar
without
the
addition
"Tradizionale")
undergoes
a
very
special
maturation,
during
which
the
vinegar
decanted
into
smaller
and
smaller
casks
each
year,
compensating
for
the
amount
lost
through
evaporation.
This
process
takes
at
least
12
years.
Then
the
balsamic
vinegar
gets
the
addition
"invecchiato",
i.e.
aged.
After
25
years
of
maturing,
it
is
then
an
"extra
vecchio",
i.e.
a
"very
old".
The
continuous
evaporation
of
the
liquid
creates
a
viscous
texture,
thick
and
full
of
highly
concentrated
aromatics.
:)
thats
real
italian
taste!
