工場内に入っていき、注文と同時にお金を支払う、支払いは現金のみです。多く皆さんが釜玉うどんを注文することも教えてもらいましたが、店内チラシのラー油が気になり釜玉ラー油の大盛りと決めていた。並んでいてもお店の方は手際良く裁く為、並ぶ時間は短いです。茹でたてうどんにラー油だけ添えられ、釜玉は自ら生玉子を１個取ります。ネギ、天かす、マイセルフのおろし生姜をチョイス。最後に醤油を一回し掛け完成です。しっかり混ぜこんで、では頂きます！一口食べてラー油のアクセントが良いね。辛いだけで無く独特のうまみがそこにはある、刻みタマネギをラー油と調味用で煮込んだものだがピリ辛で美味しいね。食後は、使った丼は自ら洗うシステムでした。今日は12/30晦日と製麺屋さんは大忙し、今朝は2時から仕事をし、うどんは勿論年越しそばの製造、更には掻き揚げなどの天ぷら類を仕込んでいた。そんな日にも短時間ながら食事の提供をしている姿に頭が下がります。朝6時から7時までのたった１時間しか営業されないのは？、この後は麺の配達があるので営業時間の延長は無理です。今後も１時間の営業時間は変わりません、朝早くからお客様に来て頂いてるので、朝一番に元気を届けたい！との思いで励んでるそうです。そんな松家製麺所さんであった。
