My
wife
and
I
have
been
frequenting
the
Northwest
Beerwerks
beer
garden
for
about
four
years
(finally...
a
timeframe
I
can
reference
that
doesn't
make
me
seem
that
old).
Throughout
this
time
we've
fallen
in
love
with
Boka
Island
Fusion,
another
food
truck
at
this
pod,
and
have
eaten
there
on
many
an
occasion.
About
two
years
ago
we
couldn't
help
but
notice
this
pretty
new
pale
yellow
truck
inserted
in
the
back
of
the
pod.
A
little
hard
to
find
if
you're
just
driving
by,
though
certainly
alluring.
This
truck
was
closed
at
the
time
as
this
was
particular
visit
was
a
little
later
in
the
evening.
We
read
the
name,
"honeycuspe
-
fine
belgian
waffles
and
espresso".
Instantly
we
were
intrigued
and
ready
to
try.
We
made
a
plan
to
come
back
the
next
morning
and
see
what
honeycuspe
(pronounced
with
a
lowercase
"h")
is
all
about.
Well,
those
plans
didn't
really
end
up
working
-
we
slept
in
and
forgot.
Next
time
we
were
at
the
Northwest
Beerwerks
food
truck
pod,
we
rediscovered
this
place
and
planned
again
to
come
back
the
next
morning
and
give
honeycuspe
a
try.
Well
folks,
we
slept
in
again.
And
again.
Repeat
for
two
years
until
yesterday
we
were
driving
back
from
the
vet
(just
a
check
up,
Shaggy's
fine)
and
incidentally
drove
right
past
this
truck.
Finally
we
were
A.)
not
sleeping
and
B.)
here
while
honeycuspe
was
C.)
open.
Two
years
in
the
making!
(not
including
active
prep
time).
This
could
not
have
been
a
more
pleasant
experience.
The
person
who
took
our
order
was
delightful
and
we
had
a
little
chat
about
our
dogs
-
even
got
a
little
treat
for
him
on
the
house.
Food
came
out
in
about
20
minutes
which
was
very
impressive
considering
the
long
line
they
had
accrued.
I
ordered
the
"Breafkast
(sic)"
and
my
wife
the
"Classic"
chicken
and
waffles.
First,
I
must
say
the
Breafkast
waffle
was
hands
down
one
of
the
best
breakfast
items
I've
had
to
date.
Eggs
cooked
perfectly
to
my
specification,
wonderful
sweetness
of
the
bacon
and
smoked
aioli
all
in
a
happy
marriage
with
the
waffle
underneath.
Never
thought
it
would
be
something
I
would
order
but
now
it's
all
I
want
to
eat
for
breakfast.
I
also
ordered
a
small
piece
of
fried
chicken
on
the
side
-
absolutely
stunning.
This
is
some
of
the
most
tender
and
wonderfully-seasoned
fried
chicken
I've
ever
had
the
pleasure
of
gobbling.
Since
I
am
a
bit
of
a
chicken
expert
myself,
I
had
to
pry
a
bit
at
their
techniques...
apparently
they
brine
AND
soak.
Well,
this
is
the
way
to
do
it,
folks.
This'll
be
one
of
those
places
I'm
always
going
back
to
planning
on
trying
everything
but
only
ever
ordering
the
same
thing
because
it's
so
darn
tasty.
A
masterpiece
collection
of
fine
belgian
waffles
with
unique
and
all
the
more
brilliant
toppings.
Needless
to
say,
we
won't
be
sleeping
in
anymore
on
Sundays.
