Hautvillers
is
a
tiny
but
upscale
village
and
this
is
a
polished
and
trendy
restaurant
featuring
Champagne
tasting
and
retail
sales.
We
had
lunch
there
and
loved
it.
Beautiful
modern
design,
sharp
attentive
staff,
and
a
focused
menu
with
fresh
and
slightly
modern
interpretations
of
poulet
femier
&
saucisse
aux
lentillions.
There
are
various
tasting
flights
that
are
kind
of
California
in
their
approach
of
delivery
but
which
I
grudgingly
admit
work
wonderfully.
There
are
three
basic
grapes
commonly
used
in
Champagne
and
you
can
taste
them
in
a
flight
where
each
glass
of
wine
is
one
grape
only
being
Chardonnay,
then
Meunier
and
then
Pinot
Noir.
Really
a
fun
process.
The
catch
is
that
a
modern
high
end
restaurant,
great
staff,
and
quality
food
has
to
be
paid
for
so
despite
being
in
a
small
village,
the
pricing
is
more
big
city.
These
people
work
hard
and
deliver.
Highly
recommend.
