    We had a wonderful meal at Dilsk. The food was stunning and immaculately presented. Of particular note were the wine pairings which were a cut above anything I’d had elsewhere.

    What an absolute gem of a restaurant to have in the heart of Brighton! From the moment you walk in and are greeted by the amazing staff, you know you’re in for a great experience! I went with my fiancée and and we had the full tasting menu between us and everything was incredible! The food here is literal art, and the visuals are backed up by amazing and creative flavours. I think the food is seasonal, so expect new and exciting flavours and combinations at different times of the year. The wine we had was also delicious, both reds, one being from Peru and the other Italy. And staff continually kept us glasses topped up, and explained dishes to us. The head chef even came table-side to present some of the dishes to us, explain what they were, and then garnish with sauces where necessary. This is a special place and I can’t wait to go back and take friends and family with me!

    Exquisite food, warm and knowledgeable service, in a charming space. The short tasting menu was perfect for a relaxed lunch. Our London visitors loved it too. Lucky us. Thanks to all the team. Make sure you go.

    Discover one of Brighton's rare gems – a restaurant offering both delicious cuisine and excellent service. The chef works magic in the kitchen, and the staff on the floor adds a touch of fun. Despite the downside of lacking parking if you are not a hotel guests, my rating remains high. Looking forward to returning soon, especially when the new menu is available!

    We were looking for a fine dining restaurant in Brighton to go to after our wedding ceremony, for an intimate party of 10. Dilsk @ Drakes hotel in Brighton pulled all the stops! Not only could they facilitate a private dining room, but also adapted their fine dining menu for three children aged between 7 and 12. Serving them pasta and delicious nibbles. They provide two canapés on arrival, which left our mouths watering and excited for the rest of the food. The adults decided to go with the short menu and it was incredible from start to finish, with all locally sourced ingredients. The price was very reasonable too considering the quality of the food and ambience of the room. We honestly couldn’t ask for anything more out of the experience we had. Maddie and her team were faultless, super accommodating and never let a glass go empty!! We cannot wait to return to this local gem.

    Short tasting vegetarian menu for dinner on Friday night. Good ambience, started out empty, but got more busy through the night. Knowledgable staff, most ingredients locally sourced and either organic or biodynamic certified. Spectacular combinations of flavour, texture, smell and sight, with enough whimsy and playfulness to keep me smiling the whole time. Unexpected surprises were the dulse, laminated brioche, the pickled mushrooms, and the cone with the lavender ice cream (which was a delight in itself). Fabulous value for money, have eaten better food, but only in Michelin starred restaurants - Tom Stephens is sure to get a star in next years guide.

    Beyond exceptional service, you feel taken cared of at every turn, great wine knowledge and although the service feels very casual and friendly, you can tell they know what they’re doing, very professional and charismatic, all you can ask for when you go to a restaurant. Carefully curated menu, bold and beautiful choices made by Chefs, confident in their product and offering, an absolute hidden gem and a treat. Can’t wait to be back again. Thank you to the Team, we need more restaurants like yours EVERYWHERE.

    We visited for our anniversary meal in October (sorry for the delay in writing this very well deserved review!)... what an amazing meal! Beautifully presented, absolutely delicious, and just a stunning meal from start to finish. The owner was lovely too and made us feel so welcome. Great experience and would recommend to anyone - a bit of a hidden gem and I'm sure it's going to be hard to get a table the more people keep discovering it!
