    Excellent staging of this Japanese restaurant recently awarded a Michelin Star We really enjoyed the snacks prepared by David and his team, they seemed super nice and approachable. The room team very attentive. We are talking about a Japanese restaurant where the traditional part is very present in its dishes, the fish does not get too “dirty” and the combinations in its hot dishes are very good. The temaki was perhaps the bite that surprised us the most and the dessert 👎🏻 is the weakest part of the menu. Having said that, you may wonder... and why do you rate it with a 2 out of 5 if you liked it? Easy, the work and quality that Zuara offers is magnificent BUT at a disproportionate cost compared to other gastronomic proposals of this level in Madrid. Very very disproportionate. €200 per person per eye, we knew the price before going because it is published (menu €165 per person) I am not complaining that it is expensive, what I am saying is that I did not see that price reflected in the staging. As I say, Madrid has other proposals (which I will not name so as not to say that it is advertising to others) of a lower price and equal quality. Regardless, Zuara's work is unquestionable and so is his product.

    One of the best sushi experiences in my life (and I've had a few excellent ones). Chef Arauz and Carlos were extremely personable and attentive. The attention is on highlighting the fish. Great sake (take the maitre d's suggestion, he's very knowledgeable)

    We really enjoyed their Tasting Menu with very well presented dishes, always taking care of the product. All the nigiris were of high quality and surprising, they stand out for their traditional cut. It is worth highlighting the great quality, cooking and fair balance of the rice. The options you have to add to the menu are spectacular to end this experience on a high note and in the best way.

    Good service, friendly and very attentive. There was just a sole menu option(shibui) despite the website indicated 2 menus (zuara and shibui). Quality of raw materials and the way of preparation was excellent but at an exorbitant price. Price you pay (165eur) it is much greater than it should be. Wine list is fine but again at ridiculous price level. You must love wasabi, since it is in all sushi served! There is no option to have sushi without it. At any moment the chef “itamae” ask for dietary restrictions or what you like/ dislike. I think requesting no wasabi for sushi and sashimi is perfectly acceptable and not rude at all. I missed the type of personal attention.. Being flexible could have improved our overall perception of the food quality.

    Way above any other restaurant that professes to be a Japanese or Sushi restaurant. The place is beyond an eaterie and is a shrine to Japanese culture and approach to cooking and service their food. The preparation is beyond anything that I have ever seen, the respect for the raw materials and the care and attention that goes into making each dish look and taste out of this world.

    We came here for lunch after a Chinese friend of mine had done some research on the best sushi places in Madrid. We absolutely loved it! We did enjoy the Spanish interpretation of classic Japanese food although we felt that the smoked rice often times overpowered the delicious produce it was served with. The grilled edamame was certainly a nice touch. Service was kind and attentive and the atmosphere just right. It was certainly a fantastic experience.

    Excellent sushi bar in Madrid. If you managed to go to Sushi Ko before, you'll feel right at home. Classy, cozy bar, excellent service and great omakase experience. Nice starters all around. I especially liked the fish made in the robata. Then the nigiris are really amazing, especially all the toro variants. They are on the higher end of wasabi, so I'd ask them to use a bit less if you don't enjoy it. It has a few extras that you can order when you reserve. The toro nigiri with caviar is great, and so is the toast with caviar to share between two. The menu is fairly long, so I'd be careful not to order everything. As with any high-end sushi bar, it's on the expensive side, but it's a very enjoyable experience.

    #Collect stars from the whole sky ⭐️ 📍 Zuara Sushi | Madrid . Come taste 1 Michelin star omakase in Madrid by Chef Sai Fo 😉 . #Ingredients - Various and quite complete, including fish, crab, shrimp, shellfish. Most of them are local ingredients. Only hotate and rice are imported from Japan. But the ingredients are of ok quality. . #Rice - strangely cooked, smoked, fragrant over a charcoal grill. The first bite I said was delicious. I got bored after eating it. They probably have changed the rice sometimes. (This one was expecting a bit more than the stars. Most of them have to be 2 stars or close to being able to see the rice swapping, right? 😅) . #Cooking nigiri - in an edomae style, emphasizing the flavor of the ingredients, aging the fish (oh my, they age it so well), with just soy sauce/salt/lemon. There is no glitter sprinkling gold. . #Style - Japanese, but the ingredients are from the Spanish sea. As for the appertizer, it's a fusion style, mixed with gastronomy. There's a lot of this and that used to make it unusual. Take this and that and make this and that sauce so there's a lot of it in there. The first 4 bites of appertizer are served at 9.40pm 😝 (Reservation 9.15pm, there's only one time because the shop opens at 9pm. Pee Nok even jokes that he's a programmer during the day. Waiting for the meeting to end before opening the shop 🤣) . #The arrangement of flavors - during the appertizer, it hits a lot, the flavor is the most exquisite. When I entered the nigiri, my first bite was completely bland. (Plus it's squid 🙈) Then we build up the flavor again. There are Aji, Sanma, Akami, Shrimp, Otoro. Oh, it's so good!! Screamed, eyes twinkling, looking at the chef, he became more handsome +100% 5555555 . The last dessert is served at #Twenty-four minutes past midnight. Yes, you can see the evidence illustration. Kato almost fell asleep 🤣 There were times when the chef disappeared for ten minutes. 'Dam thinks he's going to sleep and rest. . Overall is good. You can come again. The only downside is that it starts a little late, according to the style of this country. We have to adjust this ourselves 😁 . P.S. I don't dare take a photo of the chef. He's so handsome and likes to stare at us when we eat. So shy!

    @zuarasushi is one of the few exquisite @michelinguide starred gastronomic experiences that Madrid has to offer. From the outside one may easily miss this abode of world class sushi because of its simple and understated entrance. Walking in there is a sense of natural calm and a Zen temple like atmosphere. We are walked to our seat by an incredible team of hosts led by the world renowned sommelier @prietoalvaro.
