It
was
about
2pm
on
a
Saturday
when
we
were
welcomed
by
a
door
chime
at
this
great
vegan
eatery.
Right
when
we
walked
in,
we
were
greeted
by
some
great
music
accompanied
by
the
most
charismatic
and
friendly
cashier
I've
met.
We
let
her
know
it
was
our
first
time
and
she
briefly
went
over
the
menu
and
highlighted
all
the
local
favorites.
The
entire
menu
was
droolworthy,
yet
nostalgic,
in
the
way
that
it
reengineered
New
Mexican
classics
like
the
stuffed
sopapilla
and
enchiladas
plate
for
a
vegan
audience.
I
ordered
the
Loaded
Fries
with
seitan
and
my
partner
landed
on
the
Nobody
Calls
Me
Chicken
Sandwich.
Washed
down
by
some
zesty
local
kombucha.
We
only
waited
a
handful
of
minutes
before
our
orders
were
shimmied
over
from
the
kitchen
by
our
cashier;
at
this
point
the
door
bell
signaled
the
bustling
patrons,
hinting
that
this
was
quickly
going
to
be
a
local
fave.
The
food
was
beyond
delicious.
My
loaded
fries
were
spicy,
flavorful,
and
the
"queso"
added
to
the
delectable
flavors
blended
with
the
seitan
(my
choice
of
protein)
in
the
compostable
tableware.
I
managed
to
snag
a
bite
of
the
mouthwatering
fried
tofu
sandwich,
and
it
sure
made
me
rethink
what
chicken
should
taste
like.
The
ambience,
the
staff,
and
most
importantly
the
food
will
guarantee
a
second
visit.
