    DSTAgE is an unbelievable 2-star Michelin restaurant in Madrid, Spain. It is beyond earthly… a slice of unforgettable, heavenly perfection. Their chef is a master who curated an unparalleled experience. We joined a few days ago for their 18-course tasting menu and opted for the wine pairing. Although we started off rocky with the first few plates, I was amazed with what followed. I did not particularly like the tomato dish - it was too mushy. So was their butterfly and soup dishes. Even though I enjoyed the wrapped leaf on the butterfly “involution,” the inside was underwhelming. The soup was just soup - a bit salty with too much soy sauce and beans; it was nothing particularly special. It is my (unprofessional) opinion, and I am only sharing this for the team to revisit these selections. However, every dish that followed was incredible! Some of my favorites were: (1) the 7-day sea bass sashimi was extremely succulent; (2) the caviar dish was indescribably good. I especially loved its presentation and unbelievable texture; (3 & 4) the tartare and truffle items were both masterfully executed; (5) the French omelette, served by Chef Diego himself, was perfection that I’ve never experienced before. It was simple yet so elegant and delicious; (6) I always dreamed of tasting fresh wasabi and sadly never had the time to source it. So, I was beyond satisfied with the wasabi leaf… it was a dream come true. Each dish deserves page-long praise, but I will not ruin this experience for you. The team is incredible, too. Every server was attentive and extremely hospitable. I loved how they would pair up, or even triple up, to serve a single dish. They were synchronized like Swiss clockwork. I also loved that their back-of-house personnel - operating in an open kitchen that is comparable to a bustling yet quiet beehive - frequently served and introduced their dishes. Chef Diego’s team cares, and it is very evident. Do not miss out on a chance of a lifetime. They truly deserve the two stars, and I believe their third is overdue. This was, by far, the best few hours of gastronomy I have ever enjoyed in my entire life.

    My husband & I had an excellent time doing the 15 course tasting menu at DStage last night. We have been to numerous Michelin starred restaurants in the past & this is one of our favorites so far! The industrial setting is unpretentious and really adds to the experience. The menu was creative and fun, while still being delicious. There were several dishes that appeared to be one thing but were something completely different, which we enjoyed greatly. Our server had us guess, but we were wrong every time. We opted out of the wine pairing, but our server recommended wines by the glass that were excellent. The pricing is consistent with what we have seen in other Michelin caliber restaurants, but we thought it was an excellent value.

    I'd like to start by saying the service at this restaurant is fantastic and cannot be critiqued. Similarly, I can appreciate the food was expertly prepared by competent chefs. However, 8 of the 15 dishes contained soy sauce, which, while delicious in small doses was completely overwhelming. Moreover, 5 of the 15 dishes (one third) contained fish. I found this an interesting choice considering Madrid is located almost 360km from the nearest ocean. A bold choice which I am afraid did not pay off. The price is commensurate with the Michelin star status. Unfortunately the meals are not. I'd like to stress that this is no fault of the staff, they were simply excellent. Wine was also fab!

    We had a 15-course dinner. Fantastic atmosphere and the design of the place, amazing staff and service, the food was really good too, some dishes were hit and miss. It’s definitely a place you’d want to go to celebrate an occasion and for the experience. Highly recommend 👍🏼

    The food, service and overall experience was amazing and I can see why it has two Michelin stars. We had the 18 course tasting menu and it was divine, and a lot of fresh seafood, a vegetables and some meat dishes and great recommendations of wine from across Spain to go with it. I highly recommend for a special occasion.

    Out of 15 course dinner I honestly enjoyed 5 or 6. The rest were sent back after first bite. I am not a very picky person but I expect much more from 2* Michelin restaurant. It felt like they are trying to use the cheapest product to come up with the most creative dish and of course it’s impossible. The crevice was also mediocre. Not enough staff and sometimes you have to remind them that the wine glass has been empty for the past 20 minutes. Honestly it was a very disappointing dinner.

However, overall, and most importantly, the food has to be tasty. In this place, it was an exception, rather than a rule. Out of 15 courses, may be 5 were ok...

    World class Michelin star restaurant which could be pushing to be the best in Madrid. 15 course tasting menu was amazing. My only issue was that because it’s 15 courses the meal is very long. Like 3 hours! Prepare for a long dining experience but a memorable one. Highly recommend.

    I've been wanting to come to dstage for years. It's one of those restaurants in Madrid that are pushing the boundaries. The head chef (Diego Guerrero) has been an excellent chef over the years and was at the exceptional Club Allard. This place has two michelin stars and a price tag to go along with it (170€/person including half a bottle of wine). We ordered the 15 course menu. The main issue is that when the price is this high and the expectations are up to other two michelin starred restaurants... We were let down. Only a couple of the dishes were memorable. I expect to be wowed in different ways at this level. We weren't. I don't know if this is because of the post covid situation limiting them in some way. However, if this were the case, I don't understand why you'd still charge the steep price for a less than normal experience. We all agreed we've had better meals in Madrid at other one michelin starred restaurants paying less than half (im looking at you, invernadero, gofio, molino de alcuneza). Underwhelmed and would not recommend unless they make some drastic changes. Won't be back.

    Overall great experience. Taste is a personal matter and to me, appetisers and desserts were fantastic, they know their cheese! Main courses though were a bit too salty and as said taste was not my favourite. That said, definitely recommend if you are in Madrid 😄

    This 2 star Michelin gem of a restaurant needs no introduction… just go. We celebrated a very special night here and would absolutely recommend it. We selected the tasting menu and every single dish was truly divine. The inventiveness behind the various courses is so incredibly unique. I wish I could repeat this dinner again!

    Wonderful lunch, with extremely hospitable staff. I loved the experience, and being treated as though guests at an intimate dinner party. We were first led into the bar after our coats were taken, and offered a cocktail. The first course was brought to the bar area. Afterwards, we were led into the kitchen and introduced to some of the staff there, and had a fun, interactive experience with the next course. Then we were led to our table where the succeeding courses were served. Each was presented with a brief explanation and sometimes finishing touches were performed at the table. We could see the owner/chef working meticulously in the open kitchen. The flavors and textures, however, were where the chef's skills really came out. I still think about the flavors we got to try that day.

    Casual setting for elevated culinary experience, with an emphasis on fermented foods and vegan trompe-l'oeil: a potato fermented with the fungi used for cheese that tastes and looks like Brie, faux-meat made of black peas, vegan chorizo, fish fermented in rice, caviar on butter, grilled garlic leaf, and many other delicacies.     Very disappointed about this restaurant. Service was distracted and not very efficient. We had to keep asking them to fill our glasses with wine and water! Food was okay but not to the level expected for a two Michelin star restaurant in my opinion. You better save your money and your expectations. Sorry, but not worth it at all.

    We had an incredible lunch here. For sheer creativity, this restaurant outclasses almost all others, even amongst the many Michelin 2 and 3 star restaurants I have visited in my time. This does mean that the dishes are not always crowd pleasers, but even when you don't particularly enjoy a dish you can appreciate the skill and thought that went into designing and making it. I want to highlight that there are some real gems in the wine flight, including a white port that they have modified themselves to have the flavours of the sea. I highly recommend trying this!

    Until now, this was the best meal I have ever had in my life. I had the 15 course tasting menu and I loved the flavors, the ingredients, the creativity. The waiters did a great job of walking you through everything on the menu. The food was not just good tasting, but many of the flavors came from unique ingredients and were composed in a way that harmonized the whole dish, yet made you stop and think about what you were eating. The food seemed to get more tasty the more you ate it. There was also some creativity in the techniques and presentations as well that were extremely interesting to me. The only thing that disappointed me was the dessert. While they were still good, the bar had been set extremely high by the rest of the meal and some desserts were a little basic and I expected a little more. That being said, if you come here you will have a thoroughly amazing dining experience and you will not be disappointed with your meal.

    This is an amazing place! Hidden from the busy streets, when you walk in, it's a relaxed atmosphere, but once the food comes, you're in for a treat! We were seated near the kitchen and it's wonderful to see and very clean. All the food is extremely original and tastes amazing. The combinations may sound weird, but I assure you they all work. E.g. Onion and banana, or the paperdelle with fermented rice. Only thing I would recommend is that they would do half portions of the wine pairing. I know in Spain, in many of these places they'd keep pouring, but some people can't keep drinking so much!

    Previous visits to this place had been always great. This time, however, we left dissapointed. The 15 course menu consists mainly of experiments that may be of interest to the chef but a bit irrelevant to the diner. A cod dish made with only the cod skin, a flan (pudding) made of cow tendons, and so on. Nothing truly delicious or memorable. The air conditioning was insufficient for a very hot day. The music, a bit loud. The service, efficient but not overly friendly. The chef himself was not there, as we expected from previous visits. A downgrade from the 2 Michelin stars seems a good forecast.

    Unforgettable experience and unique! I can’t be more thankful for the service and friendly staff they have, starting for Emi, she made our experience more comfortable and fun. The food was extremely delicious, something that I’m still dreaming about it 😅 and I can’t express myself in words. I was there with my husband and we are both in shock with every plate. We took the 15 elaboration with wine pairing. For me is impossible remember all the names of each one but I will never forget the taste of the second, third and sixth dish. Thank you so much Diego for the amazing experience and treat us with so much love 💕

    We have enjoyed for the third time this unique experience created by Diego Guerrero. The welcoming atmosphere, the completely open kitchen, the ability to watch the Chef as he concentrates on the preparation of each dish and, of course, the unique and surprising flavours that Diego gives to our palate, make you want this moment to never end. Diego's cuisine is not show cooking, although his dishes are simply spectacular in both flavour and presentation. We have never enjoyed a gastronomic experience so much, and obviously, that's why we come back again and again. And he never ceases to amaze us! And I have to highlight the simplicity, humility and friendliness of this Chef. Every day he gets closer, more attentive, always with a smile on his face, patiently explaining the different preparations, going from table to table to attend to all his customers equally. Nor can I forget the incredible team that Diego surrounds himself with, they all follow his example and the level of attention, kindness and friendliness is unbeatable. I highly recommend the long menu with the wine pairing, it's worth it! I never tire of praising this restaurant and its Chef. If you visit Madrid, you can't leave without enjoying an unforgettable gastronomic experience at DStage.

    We had an amazing experience thanks to wonderful chef Diego Guerrero and his team. We opted for 18 course option with wine pairing and that enhanced our experience beyond our expectations. The food and the drinks were masterfully created and paired. We were at awe the entire night. Chef Guerrero also stopped by our table and was so welcoming and humble. One can most certainly feel amongst friends here. Thank you DSTAgE for the magical experience.

    If I could choose just only one place in Madrid, Dstage would be it- it is for sure my greatest favorite. It is just awesome!!!     My husband and I were disappointed after dining at DSTAgE - we went for the 18 course degustation. The dishes were super creative however none were amazing tasting. For a menu worth 170 Euros p.p., we were surprised that the ingredients and cuts of meat utilised were seemingly cheap. For example, one of the dessert dishes is literally a fermented strawberry cut into quarters with some cream on top. Service was incredibly slow and inconsistent; we commenced our seating at 9pm and after the first hour we had been served three bite-sized dishes. A table nearby us having the same menu was seated at least 30min after us however somehow they were quickly being served dishes before us even though we were efficiently finishing our dishes. Towards the end of the menu there is a cotton candy dish requiring you to use your hands to eat. It's quite messy and sticky and I thought it was strange we weren't provided with a wet towel to clean up. After we finished our meal and were ready to leave, we noticed another table were being served the same dish and were provided with wet towels... Finally, when we paid the bill we asked for some help with calling a taxi (it was 1am by the time we finished). The waiter was sort of reluctant to help and made a comment about it being easy to get a taxi (we're on holiday from overseas so I don't think it was unreasonable for us to have asked for help). He did ultimately help us and said he would let us know when the taxi arrived however once again the service wasn't proactive and we noticed a taxi waiting outside for some time; it was only when we asked if it was our taxi that it was confirmed it was ours. Overall, interesting dishes however they aren't particularly delicious - especially at the price point - and the service is inconsistent. Very disappointing for a restaurant with two Michelin stars.
